It’s Wednesday morning and my kids need to be walking into their classrooms in 30 minutes…and they haven’t eaten…and I still have to drive to their school. This is a typical morning in our home, mostly due to the fact that I strive to let my kids sleep until the very last moment so they can make it through the day feeling refreshed and ready to learn. Sometimes we’re scrambling because someone forgot a project was due or a form needed to be completed or they needed an entire soccer outfit for spirit day. Despite the fact that breakfast during the week is often a last-minute thought, I have yet to send my kids to school without this most important meal.
As you can imagine, weekday breakfasts typically consist of cereal, quick breads I can heat up in the toaster oven and oatmeal. Oatmeal often evokes a feeling of nostalgia dating back to my own childhood. My parents would often make this traditional breakfast dish with a touch of brown sugar and cinnamon and I specifically remember the warmth and comfort it evoked, particularly during the winter seasons.

I often gush about my love for breakfast through stories and recipes. Weekends afford me opportunities to create lavish, gourmet-inspired meals that are often breakfast-centric. Inspired by our family’s love for oats, I decided to bake this easy Blueberry Oatmeal Coffee Cake using McCann’s Quick Cooking Irish Oatmeal. It combines all of my favorite flavors including cinnamon and vanilla into one deliciously sweet, moist breakfast cake.
Here is my recipe for Blueberry Oatmeal Coffee Cake (adapted from McCann’s Irish Oatmeal Breakfast Cake):

- 1/2 cup plus 3 tablespoons unsalted butter
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups plus 2 tablespoons all-purpose flour
- 4 teaspoons ground cinnamon
- 1-1/2 teaspoons baking powder
- 1 cup buttermilk
- 1 cup McCann's Quick Cooking Irish Oatmeal
- 1/4 cup dark brown sugar
- 1 cup fresh blueberries

Preheat oven to 350°F.

Lightly coat a square baking dish with non-stick cooking spray.

Cream 1/2 cup butter and granulated sugar until light and fluffy.

Beat in eggs.

Mix in vanilla extract.

Combine 2 cups flour, 2 teaspoons cinnamon and baking powder. When well blended, alternately stir into the creamed mixture along with the buttermilk.

Gently fold in blueberries but do not mix or batter will turn gray.

Scrape batter into prepared cake pan, smoothing top with a spatula.

Place oatmeal, brown sugar and remaining butter, flour and cinnamon into a small mixing bowl. Using your finger tips, blend together to make coarse crumbs. Place on top of the batter and gently push down into it.

Place in preheated oven and bake for approximately 50-60 minutes or until a toothpick inserted into the center comes out clean and topping is lightly brown and crisp.

Remove from oven & place on a wire rack for at least 10 minutes before cutting.

Fold blueberries into batter gently to prevent it from turning grey.

Smooth batter with a spatula before adding topping

Press topping into cake batter before baking

I just like it as plain old oatmeal with berries! It took the kids a few tries to warm upto it, because the texture is a bit different from the oatmeal they were used to, but everyone eats it now.
