It’s midday on a Tuesday morning in downtown Anaheim and Yelp is the only hope I have for finding a decent (translation: Instagram-worthy) breakfast spot. My friends know two things about me: If we go out to eat before 3 pm we’re having breakfast and that breakfast is going to be the best meal you had all week. My latest Yelp ventures led me to a strip mall, which houses this incredible breakfast hot spot in the middle of several unrecognizable retailers.
As I perused the brunch menu, I noticed a trend that continues to pop up at local restaurants…put an egg on it. From salads and soups to burgers and risotto, topping your favorite dish with this protein-packed delight will make any dish egg-cellent. That particular day I was craving pizza…and eggs. It inspired my latest recipe…a simple Spiralized Potato Breakfast Pizza.
I was first introduced to the concept of spiralizing vegetables when a close friend of mine learned that she was gluten-intolerant. With 3 kids and a husband to cook for, she knew that cutting our their favorite gluten-rich dishes like pizza and pasta would present a challenge. She began making her favorite pasta and stir-fry dishes with zucchini noodles and her family actually enjoyed those dishes.
Whether you are gluten-intolerant or are simply looking to cook healthier meals for your family, Farberware’s Spiraletti is a must-have kitchen tool! In just a few minutes, you can spiralize fruits, vegetables, cheese and more to use in your favorite dishes. The Spiraletti includes three stainless-steel blades that can be used for your favorite fruit and vegetable dishes. I used the thin blade to spiralize sweet potatoes in this Spiralized Potato Breakfast Pizza, however, you could easily use the thick spiral blade in this recipe. This gadget will be your favorite kitchen tool as you experiment with zucchini noodles, hash browns, onion rings, cucumber ribbons and more.
For this Spiralized Potato Breakfast Pizza, I took several of my favorite breakfast ingredients and combined them with my favorite pizza ingredients for a gourmet delicacy you can enjoy all day! I began with a spiralized sweet potato crust and topped it with sun dried tomatoes, onions, garlic, mozzarella and ricotta cheeses, fresh basil and a fried egg. The result was absolutely incredible!
- 2 potatoes scrubbed, peeled and spiralized
- 1 tbsp olive oil
- 1/4 tsp garlic powder
- salt to taste
- pepper to taste
- 2 eggs lightly beaten
- 1/2 onion sliced
- 1/4 cup sun-dried tomatoes chopped
- 1 clove of garlic minced
- 1/2 cup mozzarella shredded
- 1/2 cup ricotta
- 2 eggs
- Fresh basil

Preheat the oven to 400ºF

Heat olive oil in an oven-proof skillet

Add potato, garlic powder, salt and pepper to the heated skillet

Cook for 3-5 minutes, or until potatoes are soft

Transfer potatoes to mixing bowl and allow to cool for 2 minutes

Combine potatoes with egg

Place potato mixture back into skillet and cook for 5 minutes over medium-high heat

Bake for an additional 10 minutes at 400ºF

Sauté onion with 1 teaspoon of olive oil in a skillet over medium heat until soft and translucent

Add sun-dried tomatoes and garlic and cook an additional 2 minutes

Brush potato pizza crust with oil from the sun-dried tomatoes

Spread sun-dried tomato mixture onto crust

Sprinkle with mozzarella cheese

Spoon dollops of ricotta over the cheese

Bake at 400ºF for 10 minutes or until the cheese has melted

While the pizza is cooking, fry eggs in a skillet over medium heat for 4-5 minutes or until the whites are set

Top pizza with fried egg and fresh basil
