Celebrate 50 Year of Dr. Seuss’ Green Eggs and Ham *Giveaway*

I remember reading Dr. Seuss’ series of books with my mom as a child (as probably most of you do too).  Today I still read those same books to my children.  There is something about Dr. Seuss’ repetitive rhyming style that is catchy and attractive to young children.  If you can believe it, it’s been 50 years since the author wrote Green Eggs and Ham.

Green Eggs and Ham is a cute little book with the simplest of story lines. You know the story…Sam I Am is determined to convince another fictional Seussian character to eat a plate of green eggs and ham.  What’s amazing to me is that Dr. Seuss used only fifty words in the entire book.  The goal, which I think he achieved well, was to get children to enjoy reading.  His imaginative characters and silly little rhymes get my son giggling and even repeating phrases from the book.

To celebrate the 50th anniversary of the book, Random House released a special foil-covered party edition which retails for just $8.99. You can also celebrate at home with some recipes inspired by the book.  Celebrity chefs Michael Symon and Melissa d’Arabian, Mitzi Dulan, RD, CSSD and Steamy Kitchen blogger Jaden Hair have created book-inspired recipes with a 21st century twist.  Here is a quick summary of the recipes from the site (surprisingly, no food color was used in the creation of these recipes):

Ham Sandwich with Greens and Eggs, courtesy of Michael Symon: Wake up to a warm breakfast sandwich that combines crisped Black Forest Ham with a fried egg, melted cheese, pesto and greens.

Ham and Green Egg Mini Tartlets, courtesy of Melissa d’Arabian: These surprisingly easy-to-make ham and egg spinach tartlets, with bread instead of pie crust, can be made ahead of time for an on-the-go meal.

Ham and Avocado Deviled Eggs, courtesy of Mitzi Dulan, RD, CSSD: Deviled eggs made green with avocado and accented with ham are ideal for after-school snacks or to serve at a party.

Ham and Green Egg Sushi, courtesy of Jaden Hair: This recipe turns the traditional ham and spinach omelet into a sushi roll – a great way to teach kids about different cooking techniques and cuisines.

My favorite?  Green Eggs & Ham Sushi

Ingredients:

Sushi Rice:

2 cups short-grain sushi rice
2 cups water, plus 2 tablespoons
1/4 cup seasoned rice vinegar

Sushi Spinach-Egg Filling:

1/2 cup frozen chopped spinach, thawed
3 eggs, beaten
1/4 teaspoon salt
1 teaspoon cooking oil

Sushi Rolls:

4 7 1/2×9-inch sheet roasted seaweed, (sushi nori)
Bamboo sushi mat, completely wrapped with plastic wrap on both sides
Sushi Rice
6 to 8 thin slices fully cooked smoked ham, OR honey ham
Spinach-Egg Filling

Cooking Directions:
To make sushi rice, place rice in fine-mesh colander and rinse well to remove excess starch; drain. Transfer to a 2 1/2- to 3-quart heavy saucepan. Add water. Cover with tight fitting lid and bring to boil. Reduce heat to low or medium-low. Very gently simmer, covered, about 20 minutes or until water is absorbed. Remove from heat. Let stand, covered, for 15 minutes.
Transfer rice to a large baking dish or bowl. Slightly cool. Sprinkle with rice vinegar; toss until combined. Cool to room temperature. Cover with damp towel to prevent rice from drying out.
Meanwhile, for spinach-egg filling, squeeze excess moisture from spinach. Finely chop spinach. Combine spinach, eggs, and salt in small bowl. Heat oil in medium skillet over medium heat. Add spinach-egg mixture. Cook, stirring occasionally, until cooked through but still glossy. Remove from heat. Cool to room temperature.
To assemble sushi rolls: For each roll, place seaweed sheet, shiny side down, on bamboo matt. Using wet hands, spread a scant 1 1/4 cups sushi rice evenly on seaweed sheet to within 3/4 inch of edge nearest you and opposite side. Place 1 1/2 or 2 slices of ham across the center of the rice. Spoon about 3 tablespoons of spinach-egg mixture in a strip across the ham.
Use bamboo matt to lift and tightly roll sushi, jelly-roll style. Shape roll by lightly pressing roll together with damp hands. If desired, tightly wrap sushi rolls in plastic wrap and refrigerate for up to 2 hours. To serve, using a wet knife, slice each roll into 6 to 8 pieces.

    my daughter likes to create new things in the kitchen… she’s only 9, so I watch while she has fun. Sometimes I will add something to her creation, sometimes we will try what she has made as is. She likes to mix up a combination of things spicy stuff for dad, regular stuff for me and her. She also likes to create cute little food animals to get her 18 month old nephew to eat when he comes over. she figures if she makes it fun to eat, he will go ahead and eat it.

    My kids like to hang out in the kitchen while I’m cooking and talk with me…it’s an informal atmosphere and they smile and laugh and tell me what they’ve been up to. They also like to munch and taste test before it ever makes it to the table.

    My family’s favorite way to have fun in the kitchen is our theme nights- the meal is centered around a theme, everyone has a job in food prep (as well as cleanup). We don’t repeat a theme without a majority vote. The trickiest so far was the left hand only cooking night….whew….

    My boys are grown now, but when they were young we had a children’s cookbook called Alpha Bakery. It had a simple recipe for each letter of the alphabet. We had a lot of fun cooking together with that little cookbook. Thanks!

    I LOVE to make food fun by “playing with it” before giving it to my kids! I make sea creatures out of hot dogs served atop pasta dyed with food coloring…I make snowmen out of grapes. I cut chicken nuggest into fish and make them “swim” in ketchup!

    My daughter just received lots of her very own cooking utensils for Christmas this year. She’s been helping me in the kitchen for months, and even insists on making her own lunches for school some days. We do a lot of our own cooking in our family, and it excites me to see my children taking such an interest in something I love so much!

    We like to have fun in the kitchen on Sat. mornings: blueberry pancakes with lots of syrup and scrambled eggs. During the summer we sometimes make waffles over a campfire in a castiron waffle iron – this is fun too (in our “outdoors” kitchen).

    we do “appetizer night” sometimes here. Everyone brainstorms together about recipes for snacks and appetizers they have seen and wanted to try lately. Then we go shopping and get everything we need to make 5 or 6 different things. We come home and everyone has jobs to do to get everything made. It makes the kitchen busy and fun..

    We have lots of fun in the kitchen. We have them help with cookies and icing, cutting veggies and hotdogs. They always want to be involved and I see no problem in that as long as one of us is there running the show and they are using the kiddie super safe knives.

    What a cool giveaway! We’re having a Dr Seuss birthday party in March for my son, who’s turning 3, and I’d love to use some of these recipe ideas.

    I love getting my family involved in cooking in any way I can. My son loves to help with messy stuff, like dough and beating eggs. I believe every person should learn to cook, so I’m hoping starting out early with him will make him a lifelong lover of the culinary arts.

    I love to cook with my seven-year-old son! He likes to pretend that we are a cooking show and he narrates what we are doing, one step at a time. He calls our show “Cooking at Home,” and naturally he is the star and I am his helper 🙂 He even came up with a theme song!

    The kids of course love helping in the kitchen, but the one thing they love above all else is adding food dye to stuff! They go crazy with it. We’ve had green eggs and ham – literally – as well as blue oatmeal, purple pizza crust, green spaghetti, etc. They eat it up! And it is fun, I gotta admit.

    Thanks so much for the chance to win this, we absolutely LOVE Dr. Seuss in our house. We did a Dr.Seuss theme in the kids room, I painted a mural and added my favorite quotes from his “Oh, The Places You’ll Go!” book.

    My family’s favorite way to have fun in the kitchen is to play Foodie Roulette. I make the base of something, and then leave the kitchen. Anyone’s who here will then go into the kitchen, look at what’s put together, and add no more than two igredients to the dish. Then I go back in and cook as I inteded. It’s a dangerous game lol.

    We love to find a new recipe (usually from the Food Network), go shopping for the ingredients and then cook it. We have a lot of fun and (usually) have a good product to eat at the end.

    We cook something for someone else. We also celebrate Dr. Suess’ birthday every year on March 2nd by eating eggs and ham.

    We love to cook together, everyone pitches in from washing the vegetables to cooking to setting the table. Cooking together as a family makes the preparation time fun and educational.

    I like to have the kids help me make dinner with me. I include them in shopping and let them pick something they would like for dinner and then we plan a day to make that special meal.
