Mini Spanish Tuna Melts

Mini Spanish Tuna Melts are the perfect way to celebrate Hispanic heritage with a delicious little snack. I just have to teach my son the basics.

“I’m Puerto Rican!”, my son exclaimed confidently as he consumed a spoonful of pico de gallo with his tacos. “Do you want to know why,” he continued. “It’s because I can handle really spicy food!”  I loved his enthusiasm as he embraced his culture, so I refrained from telling him at that moment that the dish he was eating was actually Mexican in origin…and that Puerto Ricans don’t typically like spicy foods.

This month we celebrate Hispanic Heritage Month, and in a constant effort to share our culture with my kids, we ask a lot of questions, research when we don’t know the answers, and talk about what makes Puerto Rican culture unique. We also cook and eat a variety of foods from different cultures, particularly Hispanic dishes. This year, I gave it a little twist with mini Spanish tuna melts.

Celebrations during Hispanic Heritage Month can be elaborate, with an expansive array of cultural foods, or simpler and lighter…a merienda. Many Hispanic Americans curb their hunger with a light meal between lunch and dinner. It is often something simple and easy to prepare such as cookies, crackers, and fruit paired with hot chocolate, coffee or juice.

Spanish Tuna Melts Ingredients

In honor of Hispanic Heritage Month, I decided to put my own RITZ twist on this Nabisco Pulled Pork Sofrito RITZwhich. This dish can easily be prepared in 20 minutes and features pulled pork, jack cheese, and sofrito tomato sauce. Since my kids are admittedly not fans of pork and I’m a pescetarian, I decided to make Mini Spanish Tuna Melts. This dish features albacore tuna, Manchego cheese, and Spanish olives.

Ingredients
  • 24 RITZ crackers
  • 1 can of albacore tuna
  • 1 tablespoon olive oil
  • 12 small slices of Manchego cheese
  • 10 Spanish olives diced
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 350 °F
  2. Mix tuna with olive oil and any spices you may prefer and set aside
  3. Place 12 crackers, smooth side up onto a baking sheet
  4. Top with cheese
  5. Bake for 3-5 minutes, or until cheese has melted
  6. Top each cracker with tuna, diced Spanish olives and additional crackers
  7. Serve immediately

Apart from it’s simplicity, I love the fusion of Spanish flavors in these tuna melts to create snack-sized appetizers ideal for merienda. I kept the dish and ingredient list simple, however, you could create a tuna salad with your favorite dressing, vegetables, and spices for a heartier dish.
