Cooking the fish on a Cedar Plank infuses a smoked flavor into the salmon that is an absolute delight to the palate. Thanks to Cedar Bay Salmon, I prepared their Sugar and Spice Cedar Planked Salmon with an easy Grilled Vegetable Couscous. The result was a delicious, healthy meal prepared in less than 1 hour!

Cedar Bay Grilling Company Recipe Challenge
Thanks to Cedar Bay Grilling Company, I decided to pair their Sugar and Spice Cedar Planked Salmon with an easy Grilled Vegetable Couscous recipe. This side dish is easy to prepare and incredibly versatile. I chose some of my favorite vegetables to grill and place in this side dish, but you could easily swap out your own favorites to complete this dish.
- 1 24 ounce Cedar Bay Grilling Company Sugar & Spice Cedar Planked Salmon Filet
- 1 cup Israeli couscous
- 1/2 Orange bell pepper sliced
- 1 Roma tomato diced
- 1/2 Red onion sliced
- 1/4 pound Aspargaus ends removed and diced
- 1 tbsp Olive oil
- 1 tbsp Lemon juice
- Salt and pepper to taste

Grill bell pepper, red onion, and asparagus in 1 tsp of olive oil until soft. Do not overcook.

Bring 1 1/2 cups of water to a boil

Add couscous and cook covered, on medium heat, approximate 8 to 10 minutes

Combine the grilled vegetables with couscous, remaining olive oil, and lemon juice

Serve immediately with freshly baked Cedar Planked Salmon
To complete my meal, I sliced and grilled my favorite vegetables on a skewer. My kids are adventurous eaters, but initially they were not 100% on board with this meal given all of the vegetables. However, once they tried Cedar Bay Grilling Company’s salmon and my Grilled Vegetable Couscous, they were asking for seconds and thirds!
