I attribute much of my culinary adventures and risk-taking to my travels abroad. My mother recalls a picky child and an even pickier teenager so it always causes her to do a double take when she sees me putting together Quinoa, Black Bean and Corn Stuffed Avocados or Vegetarian Meatballs.
France is one of my favorite countries in all of Europe and during my last visit, I spent some time exploring Provence, a region in the southern part of the country a warm, dry Mediterranean climate. Olives are prominent in the region and make their way into many local dishes, including the widely popular Tapenade. Traditionally enjoyed as an hors d’œuvre, Tapenade is comprised of finely chopped or pureed olives, capers, anchovies, and olive oil and often spread on bread or crackers. Since I still haven’t acquired a taste for anchovies, I decided to adapt the traditional Tapenade recipe.
Garlic, vinegar or lemon juice, and herbs are often added to enhance the flavor of this spread. I opted to keep it simple by adding a just a touch of lemon juice and a few cloves of garlic. I also used a combination of black and Kalamata olives from Pearls Olives to Go!
Musco Family Olive Co., the brand behind the latest single-serving innovation, is making it even easier for families to snack by offering ready-to-eat pitted olives in smaller portion sizes. Like most olives, Pearls Olives to Go! are free from gluten, dairy, sugar, cholesterol, trans fats and GMOs. All Walmart stores carry Black Ripe Pitted varieties and select locations offer Kalamata, Stuffed Pimiento and Sliced Black Ripe Olives.
Many people prefer to simply enjoy olives as a snack, but I prefer to utilize them in recipes like salads, pizzas, pastas, and more. I absolutely love the idea of hearty toppings on breads (as opposed to just butter) so I recreated the traditional Tapenade Recipe and picked up a loaf of Walmart’s Marketside French Bread and the result was delicious and savory.
- 1/4 cup Black Ripe Pitted Olives
- 1/4 cup Kalamata Olives
- 2 cloves of garlic minced
- 1 tsp capers drained
- 1 tbs lemon juice
- 1 tbs olive oil

Combine all ingredients in a food processor

Pulse until mixture is chunky but not pureed

Serve with fresh French Bread
