By the time we sat down for dinner, my kids were already done. They went from being pleasant and agreeable to hangry in a matter of minutes. While they are no stranger to eating out, I try to cook most of our meals at home in order to avoid the evening meltdown. We all enjoy home-cooked meals, but our schedule doesn’t always allow for lavish, time-consuming, ingredient-heavy dishes. In an effort to save time and get dinner on the table in a timely manner, I’ve found a few tips and shortcuts that keep us all sane while still providing our family with healthy, flavorful meals.
Recently, I was introduced to Ling Ling, a brand that was founded by Clarence Mou and his family after they migrated from Taiwan to San Francisco. They have these incredible frozen Fried Rice Entrées that can be prepared in under 10 minutes and rival my favorite Asian restaurants when it comes to quality and flavor. The Mou family’s passion for sharing their heritage through food began with a small Asian restaurant that boasted generational recipes prepared from scratch. Their potstickers and dipping sauces were widely popular, and the family began creating frozen foods to meet consumer demand. Continuing in the Mou family tradition, Ling Ling uses authentic recipes inspired by regions of China, Japan, Korea and Thailand. Their frozen foods are crafted from pure ingredients including rice, vegetables and Asian seasonings without the addition of artificial flavors, colors and preservatives. Additionally, Ling Ling utilizes an Infusion Cooking Method which ensures that each grain of rice is infused with Ling Ling signature sauces so that each bite is exquisite.
I was absolutely delighted when I found their Fried Rice Entrées at my local Ralphs Fresh Fare Market. They are available in 5 different varieties (Yakitori Chicken, Yakiniku Beef, Thai-Style Chicken, Chinese-Style Vegetable, Bibimbap Beef) and retail for under $10.
One of the unique challenges in our household is the fact that I am a vegetarian and my kids eat meat. Most days, I am cooking two different dishes for our family, which can be time-consuming and expensive. During my latest grocery run, I picked up Ling Ling’s Chinese-Style Vegetable and Thai-Style Chicken varieties. My kids are little foodies and were introduced to Asian cuisine from an early age, so I knew they would love both varieties. My kids love Orange Chicken, so I decided to prepare the Chinese-Style Vegetable Fried rice to compliment the dish. I also prepared fresh steamed vegetables for myself. The entire meal for both my kids and myself took less than 30 minutes.
Ling Ling’s Fried Rice Entrées can be prepared in the microwave or on the stove-top using a skillet. I always prefer to cook food on the stove or in the oven, and the added benefit of cooking these entrées in a skillet is that you’ll get the same crispy texture you enjoy at your favorite Asian restaurants. If you do prefer a rice that is moist in texture, the microwave is the preferred cooking method.
Using just a touch of olive oil, I prepared the Chinese-Style Vegetable Fried Rice in just 7 minutes. It was quick and easy and the result was absolutely delightful. I prepared two bags for the 3 of us and there was very little rice leftover because my kids devoured the entrée. As I mentioned above, I served the Fried Rice with Orange Chicken for my kids, a recipe that is easy, flavorful, and healthier than the traditional fried version.
On the rare occasion that we do go out to eat, my kids will often request a visit to our local Asian restaurant. I love that I can provide them with authentic recipes from the comfort of home. It is easy to get into the habit of preparing the same handful of dinner dishes. Because our family has a diverse palate, I can incorporate Ling Ling’s Fried Rice Entrées into our menu. Some nights we will have Thai Coconut Soup which would pair nicely with Ling Ling’s Thai-Style Chicken. We also really love Japanese food and could easily incorporate the Yakitori Chicken Entrée with a Cucumber Salad.
