Homework, after-school activities, and the unexpected trip to prepare for the following days’ last minute project mean mealtimes are often squeezed into the mix as an afterthought. In spite of our busyness, I regularly commit to preparing home-cooked meals for my kids, even if they are as simple as brown rice (prepared in the rice cooker), baked organic chicken, and steamed veggies. I’m raising two little foodies so whenever I have the time, I surprise them with one of their favorite dishes….lasagna!
Admittedly, lasagna is a significant time commitment and I always find myself underestimating that time (despite the fact that I make it at least a couple of times per month). I recently came across the Ragù®’s Weeknight Skillet Lasagna Recipe and was thrilled at the idea of cooking an entire dish in one skillet. Not only would this save me time, since foods always cook more rapidly on the stove than in the oven, but also reduces the number of dishes used during preparation and cooking.
At just 6 ingredients, this Saucesome Ragù® dish seems simple enough to prepare on even the busiest nights of our week, so I decided to give it a try with a vegetarian twist. While my kids are not vegetarian, I often prepare hearty meatless dishes when I’m pressed for time. Rich in nutrients, antioxidants and other cancer-fighting components, I decided to use fresh spinach in this One Skillet Three Cheese Vegetarian Lasagna. I also substituted whole wheat lasagna noodles for convention and boosted the vegetable content of this dish with fresh tomatoes and onions and flavored it with garlic and fresh basil. My father often made lasagna when I was a child, and I still use his secret ingredient when preparing my own version….nutmeg!
- 1/2 yellow onion diced
- 2 cloves of garlic minced
- 1 T olive oil
- 2 Roma tomatoes diced
- 1 1/2 cups Ragù® Hearty Traditional Sauce
- 1 1/2 cups water
- 6 Lasagna noodles broken into 2-inch pieces
- Dash of salt and pepper to taste
- 3 cups of fresh spinach
- 3/4 cup ricotta cheese
- 1 egg
- Dash of nutmeg
- 1/2 cup mozzarella cheese
- 2 T parmesan cheese
- 3 fresh basil leaves chopped and divided

Sauté onion and garlic in olive oil until soft but do not brown

Add tomatoes and 1 fresh basil leaf (chopped) and cook until soft

Add Ragù® Sauce and water and bring to a boil

Stir in uncooked noodles (may add an additional 1/2 cup of water if the mixture looks too dry)

Cover and cook over medium heat 15 minutes, or until noodles are tender (stir frequently to keep noodles separated)

While dish is cooking, combine ricotta cheese with one egg and a dash of nutmeg

Top noodles with spoonfuls of ricotta cheese and sprinkle dish with mozzarella cheese

Cover and simmer approximately 5 minutes or until the cheeses are melted

Garnish dish with freshly grated Parmesan cheese and 2 basil leaves (chopped)

Serve immediately

Tip Place the oven-safe skillet under your broiler (on low) for 3-5 minutes in place of melting the cheese over the stove for an oven-baked appearance and taste
In this dish, we used Ragù® Hearty Traditional Sauce, which has a delicious, authentic Italian taste your whole family will love. I opted for this variety because it does not contain cheese which means I was able to use this sauce in the allergen-friendly version I made specifically for him.
