One of my absolute favorite dishes to indulge in is nachos. In fact, I’ve spent the last few days getting a gourmet look at Disneyland’s finest dining venues, and one of the dishes I split with a few colleagues was their Lobster Nachos! Loaded with cheese, sour cream, guacamole and other gourmet toppings, I started thinking about ways to put a healthier but tasty spin on a traditional game-time favorite. When I’m not dining out, I traditionally snack on baked pita chips as an alternative to fried tortilla chips because they are lighter (in fat and calories) and satisfy my salty/crunchy cravings.
Did you know that you can make your very own with pita bread, olive oil, and a touch of sea salt? I whipped up a batch for the big game, then decided that I needed to top them with something festive and fun, so I created a delicious Greek Nachos Recipe as a healthy twist on traditional nachos. Since game time is all about finger foods and quick dishes, I recommend getting an early start on these homemade baked pita chips so you don’t miss the kick-off! If you’re short on time, you can always purchase a bag at your local grocery store.
- Baked Pita Chips see recipe above
- 1/2 cup Dannon Oikos Cucumber Dill Yogurt Dip use more or less as desired
- 2 chicken breasts I used a Greek Dressing to marinate the chicken before placing it on the grill, grilled and cubed
- 1/2 red onion chopped
- 1/2 cucumber chopped
- 3-4 green onion stalks chopped
- 1/2 cup Kalamata Olives pitted and sliced
- 1/2 roasted red pepper chopped
- 2 sprigs of parsley chopped
- 10 Cherry tomatoes quartered
- 1/2 cup of feta cheese chopped

Arrange warm pita chips on a plate

Drizzle chips with yogurt dip (I placed 1/2 cup in a ziploc bag and then cut off the corner for an even drizzle)

Top with chicken, chopped vegetables, and cheese and serve immediately
Once you’ve baked your pita chips, simply chop up your favorite Greek-style ingredients and assemble the nachos.
Everything I used for my Greek Nachos Recipe was purchased at my local Walmart where they have everything available for the big game.

The most time-consuming part of this recipe is simply chopping all of your ingredients up. Most of these will fare well in the refrigerator, so I recommend chopping everything up the night before or early on the morning of the big game so that you can simply assemble these Greek Nachos in minutes. Traditionally, my husband and I would make a Tzatziki Sauce to go along with this dish, but I picked up a container of Oikos’ Cucumber Dill Greek Yogurt Dip and it reminded me a lot of the traditional Greek sauce. Rather than spend time making the sauce, it was nice to be able to pick up a container at my local Walmart and save a step!
These nachos reminded me of my favorite Greek salad with a twist. The recipe uses a ton of fresh, healthy ingredients but still manages to satisfy my cravings for salty and crunchy foods.
