Getting dinner on the table 5+ nights a week is often stressful and challenging. Homework, after-school activities, church commitments, and work mean that I don’t often have time for elaborate meals. I strive to cook a meal each night during the week, but there are times when my husband and I agree that picking up a freshly prepared Rotisserie Chicken is preferable if the only other option is to eat out. Very often, we’ll pick up the chicken and then quickly whip up a few vegetables and sides so that dinner is ready in less than 30 minutes. But earlier this week, I started thinking about recipe ideas that could be prepared just as effortlessly.
My children absolutely love pasta so I decided to create a simple dish incorporating the Rotisserie Chicken we picked up from Walmart along with some fresh vegetables. Because I prefer minimally processed foods, I was happy to see that these Rotisserie Chickens are prepared daily without preservatives. Our store actually includes the time they were prepared which gives me reassurance as to their freshness. Through the end of the month, you can purchase one at your local Walmart for just $4.98 (they’re currently on Rollback and regularly priced at $5.98). This whole chicken was large enough to create a pasta dish plus we had extra for leftovers the next evening.
As a general rule, I prefer incorporating proteins into dishes to make them more appetizing, and its generally how I get my kids to eat meats like chicken. I started dreaming up all kinds of recipes to make with the chicken we purchased including a pot pie, a casserole, sandwiches, and salads. Since the goal was simple, fresh, and easy, I opted for a Rotisserie Chicken Pasta Recipe.
- The Breast of 1 Rotisserie Chicken chopped
- 1/2 red onion chopped
- 1 clove garlic minced
- 1/2 zucchini sliced
- 15 cherry tomatoes sliced in half
- Goat cheese
- 8 ounces of whole grain pasta
- Vinaigrette:
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- salt and pepper to taste

To make the vinaigrette, combine olive oil and vinegar with salt and pepper and shake to combine

Set aside

Sauté onion and garlic in 1 teaspoon of olive oil until soft and translucent

Add zucchini and cook until soft

Remove from heat

Cook pasta 12-14 minutes (al dente)

Drain pasta (do not rinse)

Toss pasta with sautéed vegetables, cherry tomatoes and vinaigrette (be sure to shake as separation may have occurred)

Top with crumbled goat cheese and serve immediately

This dish is quick and easy to prepare with the most time-consuming part being preparation (chopping and sautéing the vegetables).
I personally love how light it is with the fresh vegetables and olive oil vinaigrette. What’s great about this Rotisserie Chicken Pasta Recipe is the fact that you could easily substitute or add in your own favorite vegetables.

Oh! I’ve been making something very similar to this but this is a nice variation on it. I am going to try it this week! I LOVE simple meals.
