Happy Valentine’s Day! Today I took my sweet kids to their preschool for a special Friendship party, made them comfort food for lunch, since it was cold here in Southern California, and oversaw their card-decorating. We rounded out the evening with this delicious Vegan Apple Spice Cake, made with Pinata apples.
Ingredients:
3 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup Vegan butter, softened (we use the soy-free version)
1 1/4 cups raw organic sugar
4 1/2 teaspoons of Ener-G Egg Replacer mixed with 6 tablespoons of warm water
1/2 cup Almond milk
4-5 Pinata Apples peeled, cored and diced
Approx 3 teaspoons organic dark brown sugar
1. Preheat the oven to 350°F. Grease a 10-inch Bundt pan
2. Combine flour, baking powder, salt, and cinnamon in a bowl ad set aside
3. Beat the vegan butter until smooth, using a stand mixer
4. Gradually add the sugar and continue mixing until light and fluffy
5. Add Energ-G Egg Replacer (be sure it’s well combined before adding)
6. Stir in the flour mixture and the milk.
7. Pour half of the batter into the prepared pan.
8. Spread half of the diced apples on top of the batter.
9. Sprinkle apples with 1 1/2 teaspoons of brown sugar
10. Pour remaining batter on top of the apples
11. Top with the remaining apples and brown sugar
12. Bake until golden brown and a toothpick inserted comes out clean, approximately 50 to 60 minutes.
Serves 8-10
This recipe is absolutely delicious! I recommended serving the cake while it’s still warm.
The apples used in the recipe are called Pinata apples, grown in Washington but originating in Germany. Back in the 70’s, researchers crossed the Golden Delicious, Cox’s Orange Pippin and the Duchess of Oldenburg apple varieties to create the Pinata apple. Deemed the “foodies apple,” it works well in a variety of dishes and can be cooked, baked, or poached. It also looks pretty with it’s stripy red appearance.
Our family loves apples and this particular variety is a new favorite because it’s sweet and juicy. The flavors are achieved by blending high sugar and high acid levels (a process that seems quite complicated). But rest assured…Stemilt Growers, who have the exclusive trademark, grows and packages Pinata apples under the Responsible Choice program which ensures that sustainable farming practices are utilized.
Pinata apples are in season from December through April and are now available at your local Walmart store.

This looks amazing and so simple! I’m not a vegan, but I grew up vegan before there were great vegan products. So, I have a fondness for vegan food…brings back memories. Gorgeous pics, too!

I have a bundt pan but I’ve never used it, primarily because I didn’t have any good recipes. I’m going to have to try this out with the Pinata apples (not to be confused with the paper mache’ kids beating monstrosity-lol)

It’s nice to know that you have discovered the marvelous Pinata Apple. I live where they are grown and harvested, Wenatchee WA. Funny that it was just a few weeks ago that I discovered them! I can now drive about 10 minutes to the Stemilt store Bountiful Fruit and pick up some fresh Pinata Apples.
