People often ask me how I decided to become a vegetarian and how difficult it is to adhere to this type of diet on a regular basis. I grew up eating a fusion of Puerto Rican and American dishes, and meat was a significant part of those meals. But as a child, I remember eating my rice (or grains) and vegetables first, always leaving the meat/protein for the end. Many nights I would forego dessert since I refused to eat meat. As an adult, I consumed less and less meat until I decided that I really just didn’t need it, let alone crave it. Practically any dish can be transformed to accommodate vegetarians and I am typically only limited by my creativity.
Because I consume salads daily, I can often get bored with the same ingredients. Recently, I decided to dream up this Warm Vegetarian Orzo. Orzo is this fantastic pasta that cooks quickly and looks more like rice (I promise it’s pasta!). Grilled vegetables, toasted pine nuts, and a sprinkle of Cacique’s Cotija Cheese resulted in my new favorite vegetarian dish!
