Confession: I don’t like leftovers! There is just something about eating the same dish 2 nights in a row that isn’t always palatable to me. My husband and I have differing opinions on the matter, and for all practical purposes (time, money, waste) eating leftovers makes sense. It’s difficult to come up with 5 unique meals each week, and given our busy schedule, I’ll often resort to leftovers on those evenings when we have swim or soccer practice. Since leftovers are inevitable, I’ve been brainstorming ways to make them more exciting by using the ingredients to create new dishes.
Thanksgiving is just a few days away, and if your house is like mine, there will be no shortage of food. This is the one time of year when I don’t actually mind leftovers (surprisingly), likely because the dishes we prepare are unique to the season. Typically, the amount of turkey is such that it can be incorporated into a sandwich or salad.
Since my children love soup and this is the perfect time of year for it, I thought I’d use “leftover” turkey in a stew recipe, incorporating some of the traditional dishes served on Thanksgiving. What’s great about this recipe is that it is very fluid. If you have some ingredients, use what you have. Soup, particularly made from leftovers, should be something prepared quickly and easily. You won’t likely need any spices since your ingredients will already be prepared.
Here is our Leftover Turkey Stew Recipe including the ingredients you’ll need!
- 1 cup cooked turkey breast chopped
- 1 cup mirapoix celery, onions, carrots, chopped
- 1 cup prepared green beans chopped
- 1 cup prepared rosemary potatoes chopped
- 32 ounces of low sodium chicken or vegetable broth
- 1 Tablespoon of Olive Oil

Sauté mirapoix in olive oil until vegetables are tender but not browned

Place all ingredients in a large stockpot and simmer for 30 minutes

Serve immediately
This soup is absolutely delightful and perfect for a cool winter day. And more importantly, it doesn’t feel like I’m eating leftovers. If your Thanksgiving meal includes rolls, be sure to warm them up to serve with a salad and you’ll have a complete, hearty meal. Anything else you have leftover can be eaten as a side dish! Leftovers don’t sound so bad when they’re up-cycled into a brand new dish.
