Most mornings, I have but 30 minutes to prepare breakfast, pack lunches, and get my children fed and on their way to school. While I always prefer home-cooked meals, I tend to take a shortcut weekday mornings, opting for cereal, granola, oatmeal, and frozen organic waffles as time-saving meal options. Breakfast is my favorite meal of the day, and since I don’t typically have time for elaborate dishes, I reserve the weekends for omelets, frittatas, quiche, waffles, pancakes, muffins, scones, and more.
I tend to be a bit of a health nut, so when Kodiak Cakes asked me to try their whole grain Flapjack & Waffle Mix, I couldn’t resist. I love breakfast, but most dishes are laden with fat, sugar, and calories. But could an “add water only” mix satisfy our family’s Saturday morning breakfast craving?
These flapjacks are seriously delish! I’m a total foodie so I prefer my pancakes light but rich in flavor. The simple ingredient list includes whole grain wheat and oat flour, nonfat dry milk, dry honey, egg whites, salt, and a leavening agent. I appreciate the fact that I know what each ingredient is, a rarity for packaged foods. To prepare them, all that is needed is water.
When I mixed up the batter, I noticed that it bubbled which made me happy as this typically means the pancakes/flapjacks will be light. They cooked up perfectly and I served them with a touch of butter and their Red Raspberry Syrup.
The mix can be used to make flapjacks or waffles, but we never got an opportunity to make waffles because we went through the mix in about a week (they’re seriously that good!).
If you prefer flavored pancakes, I recommend checking out their recipe collection or simply adding your own. You could add fresh blueberries or chocolate chips to the mix. Or for a bit more indulgence, try their Pumpkin Pancakes recipe with Dark Chocolate Chips.
