Sweets are my weakness. Perhaps that is why I’ve yet to lose this stubborn 10 pounds, a reminder of my pregnancy ice cream binges and midnight grilled cheese sandwiches. With summer just a few short weeks away, I’m looking for refreshing ways to satisfy my sweet tooth minus the fat and calories. I’m also looking for ways to make simple desserts that can be enjoyed regularly, as opposed to elaborate desserts that require dedicated time and planning.
One of my favorite go-to snacks is a simple berry parfait. Fruit, particularly berries, are naturally sweet and can be incorporated into a parfait in a variety of ways. I’ve used custard, creme fraiche, and marscapone cream cheese in my parfaits. But if I really want to shave the fat and calories, I’ll use a plain or vanilla Greek yogurt! Topped with COOL WHIP Whipped Topping and Voila! Desserts Made Simple.
- 1/2 cup Greek Yogurt Plain or Vanilla
- 4 Strawberries sliced
- 1/4 cup Blueberries
- 1/4 cup Raspberries
- 2 Tablespoons COOL WHIP Whipped Topping
- optional 1/4 cup Granola

The recipe above is practically effortless, affordable, and delicious. It doesn’t require a lot of time to create or an elaborate list of ingredients. It’s also a dessert I feel like we can enjoy regularly, which is important to our family. And, the combination of fruit, protein (dairy) and carbs (if you add the granola) makes for a treat that will do more than just satisfy the taste buds.
It’s not often that I have the time to dedicate towards creating elaborate desserts. Something as simple as adding a dollop of COOL WHIP to a serving of mixed berries now becomes a treat…a special “dessert” that doesn’t add a significant amount of fat or calories.
Over the years, we’ve used COOL WHIP in a variety of ways…as a topping and filling for cakes and pies, in and on mousse, and of course, to make ice cream sundaes. Since there is no actual preparation (it’s available in the freezer section of your local grocery store) , you can use it to make any variety of treats (whether simple or elaborate) special.
