It’s hard to get creative with breakfast, when most days I literally have less than 30 minutes to prepare a meal for my family. I realize we could probably wake up earlier, but our days are already long enough that the most sensible solution is to simply have a handful of easy breakfast ideas (and the ingredients needed to realize those meals) that I can rotate through each day of the week. My quick and easy breakfast repertoire includes hot and cold cereals, frozen waffles, fresh fruit, and eggs (which can easily be boiled or scrambled). As you can imagine, at the end of the week, we’re all looking for something a bit more creative which is why I decided to create two delicious waffle sandwiches that can be eaten for breakfast OR lunch!
As you know we’re just a over a week away from the 2014 Winter Olympics, and thanks to my partnership with Kellogg’s, I’ll be sharing some of my favorite tips to help families get their day off to a Great Start. We know that breakfast is the most important meal of the day. A number of studies have demonstrated the benefits (particularly in children) including improved concentration, attention, and memory, improved IQ scores and a decrease in the incidence of obesity. “Breaking the fast” helps ensure that our bodies get those important nutrients needed for cognition and physical growth and development. I personally feel sluggish and “off” when I don’t eat breakfast and I can only imagine how my kids would feel if they tried to learn math or take a spelling test without having had breakfast.
To reap the benefits of breakfast and get the day off to a great start, meals don’t have to be elaborate. A simple bowl of cereal with almond milk and fresh fruit is often what my children eat before I send them off to school. We keep a variety of different cereals on hand so they can pick and choose their favorite that morning. Giving them options gets them involved and affords me those mini teachable moments where I can talk to them about nutrition.
Since I don’t have a lot of time to be creative in the mornings, I started brainstorming how I could elevate breakfast (specifically for my husband and I) without adding in a lot of time for preparation. Kellogg’s offers a pretty expansive selection of Eggo Waffles that are easily toasted and ready in minutes. Since my husband and I like a little protein in the mornings, I put together two waffle sandwich recipes that can easily be recreated in minutes with a bit of planning the night before. Before each recipe, I’ll show you the ingredients you’ll need to recreate them.
- 1 Eggo waffle
- 1 egg scrambled
- 1 slice of Gouda Cheese or 2 if you're adventurous
- 2 slices of tomato
- 2-3 slices of avocado

Once egg has been cooked, layer frozen Eggo waffle with Gouda cheese and egg

Toast for 2 minutes

Top with sliced tomato and avocado
- 1 Eggo waffle
- 1 egg scrambled
- 1 slice of Gouda Cheese or 2 if you're adventurous
- 2 slices of tomato
- 2-3 slices of avocado

As I mentioned above, with a bit of preparation the night before, you can enjoy these gourmet waffle sandwiches regardless of how much time you have in the morning. If you’re planning to make the Smoked Salmon and Herbed Cream Cheese Waffle Sandwich, be sure to make the Herbed Cream Cheese the night before and store it in a sealed container. Cut up your cucumbers and red onions and store those separately so they are ready to use in the morning. In the morning, simply toast the waffles, spread a generous helping of cream cheese over them, then layer your smoked salmon and veggies over the top. The Egg, Avocado and Gouda Waffle Sandwich can be put together just as quickly. Simply scramble the egg(s), then layer the waffle with the cheese and the egg and toast until the cheese has melted. Top with avocado and enjoy! These sandwiches are delicious for breakfast, however, you could also pack them for lunch!
