In less than 48 hours, we went from sliding down the Twister Waterslide on the Carnival Splendor in the middle of the Caribbean Sea to soccer practice, swim team, and homework. In some ways, I prefer the structured routine of the school year. Everything about our schedule, including meal times and bedtimes is set, and despite the rigor of back-to-school, my kids thrive on routine.
One of my biggest challenges during the school year is preparing healthy meals for my kids. Even with our busy schedule, it is still uncommon for us to eat out. I prefer home-cooked meals made with fresh ingredients because they taste better and we end up saving money, even if those foods are organic. While I have a repertoire of quick, easy dinner recipes, packing my kids’ lunches is a struggle. My kids are the anomaly, preferring homemade organic chicken and brown rice over macaroni and cheese or peanut butter and jelly.
While I was traveling, I started brainstorming easy lunchbox ideas and came up with a simple, absolutely delicious Vegetarian Pizza Roll-Up Recipe. Utilizing fresh veggies, all-natural pizza dough, and fresh mozzarella, I was able to whip up a batch in less than 30 minutes.
What’s great about these Pizza Roll-Ups is that they can be easily consumed without a mess by a child since they are considered a finger food. Pack them in a thermos so they stay warm and include a side of pizza sauce for dipping. This is a great way for kids to get in veggies (and even fruit, if you prefer). Opt for whole grain pizza dough and they’ll also get in fiber and whole grains.
I actually made a version of this recipe with vegan cheese for my son who can’t tolerate dairy and he loved them. Here is my recipe for Vegetarian Pizza Roll-Ups.
- Refrigerated pizza dough
- Olive oil
- Fresh mozzarella cheese shredded
- Red onion diced
- Green bell pepper diced
- Cherry tomatoes halved
- Dried oregano and garlic powder combined

Preheat oven to 375°F

Prepare baking sheet with parchment paper

Roll out pizza dough and cut into a square

Cut dough into 8 triangles and carefully place on parchment paper

Brush olive oil onto pizza dough

Place 1 tablespoon of mozzarella cheese, onions, and bell peppers onto dough (feel free to adjust amount per your preference)

Top with sliced cherry tomatoes

Beginning with the wide end of the triangle, tuck dough in on both sides and roll up dough

Place the pizza roll-ups seam side down onto parchment paper

Brush each pizza roll-up with olive oil and sprinkle with oregano/garlic powder mixture

Bake at 375°F for 20 minutes or until pizza roll-ups are golden brown

Use caution when serving as filling will be hot

Serve pizza roll-ups with pizza sauce
