My immediate thought was that I would put together a cold soup, perfect for cooling off from our warm summer heat. Since this box was abundant in citrus, I used the grapefruit, oranges, and tomatoes to create a Vegan Grapefruit Gazpacho!
- 1 grapefruit peeled
- 2 oranges peeled
- 3 tomatoes seeded
- 1/2 red bell pepper seeded
- 1/2 cucumber peeled
- 1 tomatillo
- 1/2 purple onion
- 3 clovers of garlic
- Juice of 1 lime
- 2 T red wine vinegar
- 1/2-1 teaspoon of Tabasco sauce
- Salt and pepper to taste
- Fresh cilantro

Coarsely chop fruits and vegetables

Purée in a blender until smooth

Chill

Serve with a garnish of grapefruit wedges and cilantro
Whenever I have an abundance of produce, I make soups and I juice. This Vegan Grapefruit Gazpacho is refreshing, tangy, and absolutely delightful on a warm summer day. Because the recipe is uncomplicated, you can tweak it to your personal taste preferences, particularly when it comes to the spices and Tabasco sauce.
