When my son was first diagnosed with food allergies, I was completely overwhelmed. Of the foods he’s allergic to, dairy, eggs, and soy have been the most challenging to substitute. Through research (both online and in stores), speaking to parents of children with food allergies, and consultation with my Pediatrician, we’ve been able to keep my son safe while still allowing him to enjoy a variety of foods. And through practice, I’ve learned how to make traditional foods like pizza and macaroni and cheese without dairy, eggs, or soy.
A few months ago, one of the natural foods markets in our area was sampling a vegan apple pie. It was delicious and tasted so much like the real thing that I decided I would attempt to replicate it. While it’s relatively easy to make a vegan pie crust from scratch, I opted to purchase one from our local market (Wholly Wholesome) to save on time. As far as the recipe, apple pie is a relatively easy dish. You could likely take your favorite and substitute Earth Balance (they have a soy-free product) for the butter in the recipe. Here is the recipe I used:
Vegan Apple Pie (adapted from Pie Maven)
1 9″ pie crust (unbaked)
3 large SweeTango apples, peeled and cut into slices
2 teaspoon cinnamon
2 tablespoons sugar
1 teaspoon vanilla
Topping (I like to use a topping because it eliminates the need for a second crust):
2/3 cup flour
2/3 cup chopped walnuts (you can also use pecans)
2/3 cup brown sugar
4 tbsp Earth Balance (soy-free), melted
Preheat oven to 350 degrees. Combine sliced apples, 1 tsp cinnamon, sugar, and vanilla in a bowl, then set aside.
Combine flour, walnuts, brown sugar, and remaining 1 tsp of cinnamon in a bowl. I like to use the mini food processor to get the nuts coarsely chopped.
Pour melted Earth Balance over the mixture and stir until everything is combined and crumbly
Spread apples inside the pie crust and sprinkle crumble topping on top (you may have topping left over).
Bake 30-40 minutes until crust edges are lightly browned and apples are soft. It took 30 minutes in hour oven as an FYI.
The apples I used in the recipe are called SweeTango apples, which became available this week at Walmart. I typically enjoy apples in dishes but this particular apple, which is a cross between a Honeycrisp and a Zestar are absolutely delicious. They’re juicy, sweet, and crisp.
Interestingly enough, SweeTango apples are new and were available for the first time last year. They were harvested mid-month which means the apples you’ll find at stores will be fresh and tasty. It takes about 7-10 days from the tree to your local store! To keep apples fresh, store them in the coldest part of your refrigerator in a plastic bag (can store up to 6 weeks).
Since we’re right in the midst of fall, SweeTango apples would make a healthy, enjoyable snack for children (as opposed to packaged, processed snacks that line store shelves). Dip them in peanut butter, yogurt, or even caramel. But my favorite way to enjoy them is in an apple pie!
