I love holiday weekends because it typically means that the hubby and I get to spend time catching up with friends we haven’t seen, spending time together as a family, and hopefully relaxing just a bit. Get-togethers (and thus food) are an integral part of Labor Day celebrations and it’s still the perfect time to grill. Rather than opting for the traditional grilled meats, why not grill up a pizza?
Pizza is our go-to meal (along with a salad, of course) when we simply don’t want to cook. We do what we can to make a dish that can be a bit on the unhealthy side, healthier. Veggies, low-fat cheese, and a whole grain crust still make for a great-tasting pizza, minus the excess fat and calories.
If you’re grilling this weekend, why not grill up a pizza? We picked up a few items from Walmart on the way back from San Diego and made a pizza that tasted incredible in less than 30 minutes.
Grilled Whole Wheat Pizza With Veggies and Prosciutto
Serves: 4
1/4 Green and Red Bell Pepper, sliced (Did you know Walmart offers locally-grown produce?)
1/4 Red Onion, sliced
1 Roma Tomato, sliced
1 tablespoon Fresh Basil, chopped
3-5 slices of Prosciutto, sliced
1/4 cup Ragu Pizza Sauce
1/2 cup Fresh Mozarella, shredded
1 Freschetta Artisan Pizza Crust (Golden Wheat)
Spread the pizza sauce on the crust and sprinkle mozzarella cheese evenly. Add prosciutto, onions, bell peppers, and tomatoes. Grill on low for 5-7 minutes. Be sure to keep an eye on the pizza because it grills quickly and you don’t want to over cook it. About 2 minutes before it’s done, add the fresh basil. Remove from the grill, cool, and slice.
I have never grilled pizza before and I really enjoyed how crispy the crust was. The cheese melted nicely and the veggies cooked all the way through.
The cost? Just $17 for the entire pizza and you’ll still have plenty of veggies, sauce, and prosciutto for another pizza or two.
Variations:
Vegetarian: Simply omit the Prosciutto
Vegan: Omit the Prosciutto and sub Daiya for the mozzarella

This looks really good – minus the onions – I love prosciutto and bet it would taste delicious on pizza.
We make homemade pizza at least once a month because it tastes so much better and I KNOW what goes on it.
