3 Ingredient Pumpkin Cake Mix Cookies + a Giveaway!

As soon as the weather starts to cool down and the days begin to get shorter, I start thinking about the holidays and all of the memories we will make together. I bake all year round, but during the holidays we kick it way up. It isn’t uncommon for me to bake several items a week in the weeks leading up to Thanksgiving and Christmas as part of various school celebrations, gatherings with friends and family celebrations.

I absolutely love to bake from scratch, but sometimes, particularly during the busy holiday season, time does not allow for the lengthiness of homemade dishes. I’ve been using products like Pillsbury’s cake mixes and frostings since I started baking with my mother as a child and what I always find exciting is how creative we can get in a short amount of time.

Pumpkin Cake Mix Cookies

I love all-things pumpkin and I tend to overdo it during the Fall whipping up everything from Pumpkin Apple Spice Muffins to Crock-Pot Pumpkin Chili.  When I saw Pillsbury’s Perfectly Pumpkin Cake mix, I decided to use it to make an easy 3-Ingredient Pumpkin Cake Mix Cookie Recipe. Cake mix cookies are not only easy and quick to make, they taste incredible!  I personally love how soft and fluffy they turned out.

3 Ingredient Pumpkin Cake Mix Cookies + a Giveaway!
Ingredients
  • 1 box of Perfectly Pumpkin Cake Mix
  • 1/3 cup oil
  • 2 eggs
  • Frosting I used Pillsbury's Velvety Cream Cheese Easy Frost
  • Sprinkles
Instructions
  1. Heat oven to 375°F.
  2. In a large bowl, combine cake mix, oil, and eggs (if you use a spoon, you'll have flatter cookies. If you use a mixer, you'll have fluffier cookies).
  3. Shape dough into 1-inch balls and place 2 inches apart on an ungreased cookie sheet
  4. Flatten cookies slightly with the bottom of a drinking glass
  5. Bake cookies at 375°F. for 6 to 8 minutes or until edges are light golden brown.
  6. Cool completely before frosting
  7. Sprinkle with Fall-inspired candy bits, if desired

Using Pillsbury’s Fall Baking Line proved that you don’t have to be a professional to bake up something amazing in just a short amount of time. These cookies look awesome and could be used for school parties, end-of-season team celebrations, or a Sunday afternoon treat for my kids. Try experimenting with your favorite cake mix/frosting combination and whip up your own cake mix cookies in less than 30 minutes.

  2. I like the Winter Holiday Cookie Mix in the Traditional Sugar Cookie Mix. I use this mix every year. Makes great sugar cookies.

  14. Oh we normally LOVE the Holiday cupcakes and frostings they do!!  I have not tried the pumpkin Cake but that looks so YUMMY!  I love anything pumpkin!!!

  65. I have only tried the Perfectly Pumpkin cookie mix and it really has a big pumpkin flavor, I ‘m really interested in trying the Carmel Apple cake mix and Cinnamon Bun cookies

  70. One of my favorite Pillsbury products to use during the holidays is the crescent rolls. There are so many things to make with them. I always make the Sausage Crescent Cheese Balls over the holidays, great appetizers! 🙂

  90. I’ve never even heard of the Caramel Apple cake mix! That might be my new fave! I also like the cookie dough with the pictures in them, like Christmas trees and Snowmen. They’re so easy and always look so cool!

  97. I’d love to try the Caramel Apple Cake mix. We’ve bought some of the other seasonal flavors of cookie mixes that Pillsbury has offered.
