As soon as the weather starts to cool down and the days begin to get shorter, I start thinking about the holidays and all of the memories we will make together. I bake all year round, but during the holidays we kick it way up. It isn’t uncommon for me to bake several items a week in the weeks leading up to Thanksgiving and Christmas as part of various school celebrations, gatherings with friends and family celebrations.
I absolutely love to bake from scratch, but sometimes, particularly during the busy holiday season, time does not allow for the lengthiness of homemade dishes. I’ve been using products like Pillsbury’s cake mixes and frostings since I started baking with my mother as a child and what I always find exciting is how creative we can get in a short amount of time.
I love all-things pumpkin and I tend to overdo it during the Fall whipping up everything from Pumpkin Apple Spice Muffins to Crock-Pot Pumpkin Chili. When I saw Pillsbury’s Perfectly Pumpkin Cake mix, I decided to use it to make an easy 3-Ingredient Pumpkin Cake Mix Cookie Recipe. Cake mix cookies are not only easy and quick to make, they taste incredible! I personally love how soft and fluffy they turned out.

- 1 box of Perfectly Pumpkin Cake Mix
- 1/3 cup oil
- 2 eggs
- Frosting I used Pillsbury's Velvety Cream Cheese Easy Frost
- Sprinkles

Heat oven to 375°F.

In a large bowl, combine cake mix, oil, and eggs (if you use a spoon, you'll have flatter cookies. If you use a mixer, you'll have fluffier cookies).

Shape dough into 1-inch balls and place 2 inches apart on an ungreased cookie sheet

Flatten cookies slightly with the bottom of a drinking glass

Bake cookies at 375°F. for 6 to 8 minutes or until edges are light golden brown.

Cool completely before frosting

Sprinkle with Fall-inspired candy bits, if desired
