Recipe: All-Bran Nut-Crusted Salmon with a Creamy Goat Cheese Sauce

Breakfast has always been my favorite meal. Last week, I was perusing my favorite culinary websites for meal-time inspiration, but all I could focus on were the Lemon Ricotta Pancakes and Apple – Cheddar Frittata.  But most days, I don’t have the time to prepare such elaborate breakfast dishes.  One of our morning go-to’s has always been cereal.  It’s quick, easy to prepare, and packs in a variety of important nutrients.  Most importantly, the kids enjoy and will actually eat it.

Over the weekends, when we have a bit more time, I like to prepare gourmet-ish, like the Vegetarian Egg Bake I re-created last month.  Surprisingly, that recipe (and many more which can be found on the Kellogg’s website) incorporated cereal.

All-Bran Nut Crusted Salmon with a Creamy Goat Cheese Sauce

This month, in partnership with Kellogg’s, I’ll be rethinking cereal and dreaming up new ways to incorporate it into other dishes and meals.  My children love Salmon and surprisingly, they don’t need sauces or spices to make it palatable.  Since salmon is one of our staple dinner dishes, I decided to elevate it with a All-Bran Nut Crust and a smooth, creamy goat cheese sauce.

Here is what you’ll need for this recipe:

Creamy Goat Cheese Sauce
Ingredients
  • 5 ounces soft goat cheese
  • 1/2 cup half and half
  • 3 tablespoons chives chopped
Instructions
  1. In a saucepan over low-medium heat, warm cheese and half and half until they whip together smoothly
  2. Whisk until it makes a thick, creamy sauce
  3. Remove from heat and fold in chives
  4. Set aside for plating

This dish is absolutely divine. One of my favorite items to order at a restaurant is a nut-crusted fish because I often find that when I order baked salmon, it is simply too dry.  The combination of cereal and nuts added the perfect amount of crunch and helped the salmon retain its flavor and moisture.  The rich, creamy goat cheese sauce was just “icing on the cake.”  A few weeks ago, I commented on Facebook that if I had to choose between cheese and chocolate, I’d choose cheese every single time. After tasting this goat cheese sauce, I couldn’t agree more. It’s smooth, rich, and utterly indulgent!

I completed the meal with a hearty Quinoa Tabbouleh and that recipe can be found on MyRecipes.com.  Quinoa is versatile enough to be served as a “cold” salad or a warm side dish, but I prefer the latter and often describe it to my kids as a type of rice.  For children who aren’t accustomed to eating it, you might consider experimenting with dried fruit to add a bit of sweetness to it.
