Easy Baja Fish Tacos

Even in the midst of running from swim lessons to karate during the week, I still carve out time in our schedule to cook dinner most nights of the week. Since time doesn’t allow for elaborate meals, I’m always looking for healthy recipes that can be made quickly in under 1 hour.

Baja Fish Tacos

My kids love tacos, and since I don’t eat any meat, we’ve started including fish as our main source of protein.  There is a local restaurant that serves up fresh Baja Fish Tacos and surprisingly, it’s one of my kids’ favorite dishes. So in an effort to re-create the dish at home, I picked up a few packages of Chicken of the Sea’s Wild Caught Salmon to make Fish Tacos!

Beer Batter

The recipe is surprisingly easy and pairs nicely with fresh pico de gallo, a creamy white sauce, fresh cabbage and avocado. I also set out a variety of toppings including jack cheese, cilantro, chives, and fresh lime so that each of us could personalize the tacos.

Easy Baja Fish Tacos
Ingredients
For the Salmon
  • 1 Chicken of the Sea Lemon Pepper Flavored Salmon Pouch  
  • 1 egg
  • 1/4 cup Panko bread crumbs
  • 1 tsp dried onion 
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/4 tsp salt
For the Beer Batter
  • 1/2 cup flour
  • 1/2 cup beer
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Sunflower oil for frying
For the Tacos
  • Hard taco shells
  • Pico de Gallo
  • Jack cheese
  • Shredded cabbage
  • Cilantro
  • White Sauce
  • Avocado
  • Fresh Lime
Instructions
For the Beer Batter
  1. Combine flour, salt, pepper and beer and set aside to rest for 15 min
For the Salmon
  1. Begin heating oil until it sizzles when the tip of a wooden spoon is inserted 
  2. Combine salmon with egg, bread crumbs and seasonings. If the mixture is too moist, you can add additional bread crumbs.
  3. Form the mixture into 4 horizontal patties
  4. Dip each patty in flour, then coat each side with batter
  5. Fry approximately 1 1/2 to 2 minutes on each side, until golden brown
  6. Set fish on paper towels to cool and drain the oil
For the Tacos
  1. To prepare tacos, place one fish patty inside each shell. Top with shredded cabbage, fresh avocado, jack cheese, pico de gallo, and white sauce.
  2. Serve with fresh lime.

Pink Salmon

If time is a barrier to cooking fresh, healthy meals, you’ll love Chicken of the Sea’s Flavored Salmon Pouches, now available at Walmart. While this particular recipe does involve some preparation and cooking, you could easily heat the salmon directly from the pouch over a skillet for a few minutes, then put these Fish Tacos together for a meal that would take less than 30 minutes. Because the fish is already flavored, you really don’t need to add any additional ingredients or seasonings. Create your very own fish taco bar with your favorite toppings including cheese, salsa, and fresh vegetables.
