‘Tis the season for baking, and our house is filled with the sweet smells of Christmas. This is one of my favorite seasons for a myriad of reasons, particularly the time afforded us with family and friends. Food is such an integral part of our Holiday celebrations and we like to mix it up by merging tradition with new customs so that our family celebration is special and unique.
Traditionally, Christmas morning is spent opening presents and reading about the birth of Jesus while cinnamon rolls bake in the oven. This year, I’ve decided to change it up by taking everyone’s favorite holiday cookie treat, gingerbread, and using the spices and flavors that characterize it for homemade baked donuts. We don’t often eat donuts simply because of the way they are prepared (i.e. fried). However earlier this year, I experimented with a baked, gluten-free donut recipe and it was so fantastic, my kids were asking me to make them daily.
Utilizing the spices and flavors of the holidays, I baked up a batch of Chocolate Gingerbread Donuts. Since every “cake” isn’t complete without icing, I topped these donuts with a simple cream cheese icing and candied ginger pieces.
Everything you’ll need for this recipe can be purchased at your local Walmart and now is a great time to shop for your baking items since each of the stores I’ve frequented have really increased their stock of these items.
- 1 1/2 cups cake flour
- 1/2 cup cocoa Powder
- 3/4 cup brown sugar
- 2 tsp baking powder
- 3/4 tsp salt
- 1 tsp ginger
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1/2 cup buttermilk
- 2 eggs
- 1/4 cup butter melted and cooled
- 1 tsp vanilla extract
- Icing:
- 4 ounces of cream cheese softened
- 2 tablespoons of butter softened
- 1/2-1 tablespoon heavy whipping cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- Candied ginger pieces

Preheat oven to 425 degrees F

Prepare donut pan with cooking spray

In a large bowl, combine flour, cocoa powder, brown sugar, baking powder, salt, and spices. Set aside.

In a separate bowl combine buttermilk, eggs, melted butter, and vanilla extract until smooth.

Pour wet ingredients into dry ingredients and mix until thoroughly incorporated

Fill each donut cavity with approximately 1/4 cup donut batter

Bake at 425 degrees F for 6-8 minutes, or until a toothpick inserted comes out clean

While the donuts are cooling, prepare frosting by mixing cream cheese, butter, heavy whipping cream, vanilla and powdered sugar until smooth

Spoon icing over donuts or dip the tops of each one into the icing and top with candied ginger pieces

Serve immediately
If you love gingerbread, you’ll be delighted with these warm, spicy donuts that feature a hint of chocolate. The cream cheese frosting compliments the flavors nicely and is particularly enjoyable when served over warm donuts. Donuts are always best enjoyed right out of the oven, but if you plan to make them overnight be sure to heat them slightly before enjoying them.
