Sometimes, when all I want is a light lunch, I’ll pop a potato in the microwave and stuff it with sour cream and chives, pair it with a salad, and call it a meal. I love potatoes, particularly when baked or sliced and sautéed with a hint of olive oil and seasonings because they are extremely versatile and can be eaten for breakfast, lunch, or dinner. I’ve never really paid much attention to the potatoes we purchase, but a little Googling schooled me on the more than 100 varieties available here in the US. And this season, there is a new potato on the market! The Albert Bartlett Rooster Potato is new to the US and sold exclusively at Walmart.
Smaller than a Russet potato, these Rooster potatoes start pink and bake golden brown and they’re grown here in the US. They can be baked, boiled, roasted, or mashed and have a nutty, buttery flavor. I popped a few in the microwave and we enjoyed them with a tad of vegan butter and I loved their distinct flavor. But then I took it up a notch and decided to stuff these potatoes with our family’s favorite breakfast ingredients. The first recipe is a twist on the traditional Corned Beef Hash, while the second is a gourmet delight for Vegetarians.
Here is my Breakfast Stuffed Rooster Potatoes Recipe:
- 1 Albert Bartlett Rooster Potato
- 1 Tablespoon Corned Beef chopped
- 1 Tablespoon Onions chopped
- 1 Quail Egg
- Vegetarian Option:
- 1 Albert Bartlett Rooster Potato
- Tomato chopped
- Goat cheese crumbles
- 1 Quail Egg

Sauté chopped corned beef and chopped onions in a teaspoon of olive oil until soft

Cook Quail egg over medium

Pierce potato with a fork and microwave for 3-4 minutes, or until soft.

Lightly butter and sprinkle sea salt on potato

Make a small cross cut in the center of the potato and squeeze gently to open it up

Place a spoonful of the corned beef and onion mixture inside the potato

Top with cooked egg

Serve Warm

Vegetarian Option:

This recipe is incredibly easy and makes a delicious alternative to conventional breakfast dishes. Try one of the recipes above or stuff them with your favorite ingredients.
