When we we were first introducing solids to my son, my husband and I ensured that vegetables were one of the first foods that he tasted. We all know how important vegetables are. Consumption decreases the risk of developing of many diseases and they are packed with vitamins and minerals not present in other foods. While my husband and I strive to incorporate vegetables in our meals, there are several that we just don’t like. We didn’t want that to be the case with our son. So despite the fact that I can’t be in the same room with steamed broccoli and my husband won’t even look at cauliflower, we’ve given them to my son. Now that he’s a toddler he is already vocalizing his likes and dislikes. We have had to be creative with his meals.
A great way to incorporate vegetables into snack time is to cut them up and dip them in ranch dressing. I might even consider eating broccoli that way (stranger things have happened!). Love Your Veggies is a nationwide campaign, initiated by the makers of Hidden Valley Salad Dressings, striving to teach families how to eat healthy, purchase and grow the best vegetables, and find creative ways to serve them. As a mom I know how difficult it is to eat vegetables, let alone get my husband and my son to eat them. The website has a ton of information including yummy recipes your children will actually eat and fun activities that you can do with your children to teach them all about vegetables. Moms, you can even enter to win a two-day retreat in Chicago with Chef Art Smith where you’ll learn and share tips and tools on planting, harvesting, cooking and eating vegetables with children.
