In the spirit of St. Patrick’s Day, I decided to put a caffeinated twist on the classic Emerald Mint Milkshake created by McCormick. Because I like to get creative with my dishes, I’ve been working with the company for the past 2 years, utilizing their extracts and spices to add flavor to foods.
One of the flavors I don’t use often enough is Peppermint. I love it in coffee, tea, and baked goods, but it can be very overpowering so be judicious when using it. Here is my take on McCormick’s cool, smooth, Irish delight!
Peppermint & Coffee Milkshake
Serves: 1
1 cup Vanilla Ice Cream (make sure it’s not too soft)
4-6 ounces of your favorite brewed coffee, chilled (if it’s hot, it will melt the ice cream)
1/4 teaspoon McCormick Pure Peppermint Extract
2-3 drops of McCormick Green Food Color, if desired for that green effect
Blend all ingredients until smooth. Top with whipped cream, if desired

Yummm! I love cold coffee drinks. I made one today too – my famous Blended Banana Mocha. Don’t hate on banana mixed with coffee til you try it — it’s divine! Excited to add peppermint to the mix (sans banana) sometime!
