Rockin’ Recipes: Peppermint & Coffee Milkshakes *Giveaway*

Posted by Caryn Bailey 62 Comments

This giveaway is now closed. Thanks for stopping by. The winner is Christine W. Congrats!

In the spirit of St. Patrick’s Day, I decided to put a caffeinated twist on the classic Emerald Mint Milkshake created by McCormick.  Because I like to get creative with my dishes, I’ve been working with the company for the past 2 years, utilizing their extracts and spices to add flavor to foods.

One of the flavors I don’t use often enough is Peppermint.  I love it in coffee, tea, and baked goods, but it can be very overpowering so be judicious when using it.  Here is my take on McCormick’s cool, smooth, Irish delight!

Peppermint & Coffee Milkshake

Serves: 1

1 cup Vanilla Ice Cream (make sure it’s not too soft)

4-6 ounces of your favorite brewed coffee, chilled (if it’s hot, it will melt the ice cream)

1/4 teaspoon McCormick Pure Peppermint Extract

2-3 drops of McCormick Green Food Color, if desired for that green effect

Blend all ingredients until smooth. Top with whipped cream, if desired

If you’re looking for a little colorful Irish inspiration, check out McCormick’s St. Patrick’s day recipes for adults and kids. I’m thinking of trying their Irish Cream Swirl Brownies or Easy Green Velvet Cupcakes. For more Irish-themed treats, visit McCormick!

Win It!  Two of you will win St. Patrick’s Day-themed McCormick Baking kits which will include an assortment of McCormick products and recipes.  Simply leave me a comment with your favorite St. Patrick’s day recipe. Comments will close on March 17th, 2012 at 11:59 PM PST.

Yummm! I love cold coffee drinks. I made one today too – my famous Blended Banana Mocha. Don’t hate on banana mixed with coffee til you try it — it’s divine! Excited to add peppermint to the mix (sans banana) sometime!
