Italian food is one of our family’s favorite types of ethnic cuisine because the dishes are full of flavor and easy to recreate at home. My husband and I have cooked everything from chicken parmigiana to shrimp arriabiata without a lot of time, money or effort.
Through the 1st of March, Publix, the Southeast based supermarket chain, is hosting Italian Days. Now, you may be wondering why this SoCal gal is writing about a supermarket chain on the other side of the country. Once or twice a year, we visit my husband’s family in the Southeast and inevitably, we make a trip to the local Publix. I also know that I have readers all over the country and wanted to share this information with you! : )
So what can you expect during Italian Days? Some of the best deals on brands like Progresso, Green Giant, Pillsbury, Muir Glen and Totino’s. You can download $8 in coupons and savings directly from the website. You can also enter to win one of four $10,000 gift cards for groceries (wow!) or one of 200 $100 Publix gift cards. And if you’re looking for an easy Italian recipe you can recreate at home, check out their recipes on the site. The Lemon-Chicken Rigatoni with Broccoli looks delicious!
Lemon-Chicken Rigatoni with Broccoli
2 tablespoons butter or margarine
2 cloves garlic, finely chopped
2 cups uncooked rigatoni pasta
2 cups Progresso® chicken broth
2 cups Green Giant® Valley Fresh Steamers frozen broccoli cuts
2 cups chopped deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
1 1/2 teaspoons grated lemon peel
1/4 cup shredded Parmesan cheese
1. In 12-inch skillet, melt butter over medium heat. Add garlic; cook about 1 minute, stirring occasionally, until softened.
2. Stir in uncooked pasta and broth. Heat to boiling, stirring occasionally; reduce heat to medium-low. Cover; simmer 11 minutes. Stir well.
3. Spread broccoli and chicken over pasta. Cover; cook 12 to 14 minutes longer or until pasta is tender.
4. Stir in lemon peel. Top with cheese.

I lerned that Publix has his own magazine – Green Wise Market
I saw you can make healthy mac and cheese by using low fat cheese, low fat milk, and then put in some broccoli or cauliflower.
I also found it interesting that Publix sells wedding cakes.

While checking out their different product lines, I clicked on the link for Muir Glen Organic Tomatoes and found some nice recipes–Angel Hair with Tomato and Basil, Roasted Vegetable Pizza, Smoky Mac ‘N Cheese, and Spinach Manicotti to name a few.

Love Publix. Love their coupons. Love their BOGO’s, Love their sales. It’s one of the cleanest, friendliest supermarkets I have come across in awhile.
