Pizza is one of our family’s all-time favorite foods and my go-to for weekends, movie nights and any other meal where I don’t have the time or energy to cook from scratch. Even with my son’s dairy allergy, we’ve managed to improvise and get creative with vegan cheese while keeping it healthy with whole grain crusts and fresh vegetables.
A few months ago, my new favorite pizza place opened down the street. Their wood-fired, thin-crust artisan pizzas are some of the best I’ve tried, so I thought I’d recreate one of my favorites, a simple, vegetarian White Pizza. Mozzarella and Ricotta cheeses are complimented by fresh garlic and I like to add spinach to make myself feel better about this slightly indulgent pizza.
While it would be ideal to make pizza dough from scratch, I’ve found that I don’t usually have the time and the whole point of pizza night is that it is quick and easy. For my latest recipe, I used Pillsbury’s Garlic & Herb Artisan Bread Mix and was able to make 4 thin-crust personal pizzas with this mix. Along with the flour mixture, these mixes include a yeast packet and all that is needed is a cup of hot water and about 10-15 minutes of prep time.
- 1 box Pillsbury Garlic & Herb Artisan Bread Mix
- 1 cup hot water 110-120 degrees F
- Olive oil
- 1/4 cup fresh garlic finely chopped
- 2 cups mozzarella cheese
- 1 cup ricotta cheese
- 1/2 bag of fresh spinach

Pre-heat oven to 425°F

Coat baking sheets with Olive Oil cooking spray

Combine bread mix and yeast in a large bowl

Add hot water
-
Stir with a wooden spoon until a soft dough forms (you may need to add flour if the dough is too sticky)

Turn dough onto lightly floured surface
-
Knead 50-75 times
-
Divide dough into 4 equal parts
-
Roll one ball of dough on lightly floured surface to 1/16-inch thickness

Place on prepared baking sheet
-
Poke dough with fork to prevent air pockets from forming

Bake 5 minutes
-
Brush crust with olive oil
-
Sprinkle 1 tablespoon chopped garlic on top of each pizza crust

Top each pizza with 1/2 cup mozzarella cheese, fresh spinach and 1/4 cup ricotta cheese

Bake for 8-10 minutes or until cheese is melted

Repeat with remaining pizza dough
-
Serve immediately
I have loved experimenting with Pillsbury’s Artisan Bread Mixes and “thinking outside of the box” as far as how they can be used beyond a simple one hour bread recipe!
