One of my kids’ all-time favorite Crock-Pot recipes is an easy Turkey Chili. In honor of the Ultimate Crock-Pot Crock-Star Contest, I am sharing my favorite recipe with a festive Fall twist. Pumpkin is my super secret ingredient for making this chili creamy and flavorful, plus it adds one more vegetable and all of its accompanying nutrients.
Everything you need to make this Crock-Pot Pumpkin Chili recipe (including the Crock-Pot) can be purchased at your local Walmart. Fresh vegetables, organic spices, and homemade white beans elevate this Pumpkin Chili without adding a lot of extra time or effort.
- 1 pound of ground turkey breast
- 1 medium green bell pepper chopped
- 1 medium yellow onion chopped
- 2 cloves of garlic minced
- 1-2 teaspoons of olive oil
- 1 can of organic diced tomatoes I use the "no-salt" variety
- 1 can of white beans or 1/2 cup of dried white beans soaked and cooked
- 1 can of pumpkin puree
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon chili powder optional
- Salt and pepper to taste
- Sour cream and chives for garnish

Sauté the ground turkey breast in olive oil

Optional Sauté green bell pepper, onion and garlic with ground turkey breast

Prepare dried beans by soaking in filtered water for 6-8 hours and simmering on low-medium heat for 1-2 hours

Combine turkey breast, tomatoes, beans, pumpkin puree, and spices in Crock-Pot

Cook on high for 4 hours or on low for 6-8 hours

Serve with sour cream and fresh, chopped chives
