Cooking Made Easy With Recipe Inspirations *Giveaway*

I just looove to cook (can you sense the sarcastic undertone?).  And because many nights of the week, my husband does not get home in time to cook dinner, I’m forced to tackle this feat.  I’ve had numerous kitchen disasters (Vanilla Soymilk Alfredo anyone?) so I stick to basic dishes like pasta with ground turkey breast, chicken with vegetables, and fish with rice.  Boring right?  But those dishes are practically impossible to mess up.

Enter Recipe Inspirations, a collection of top recipes from McCormick which include a recipe card and six pre-measured spices/herbs to achieve the perfect flavored dish.  Before I actually tried the product I was excited.  I was on a conference call discussing spices recently, and confirmed what I had suspected…I don’t use nearly the amount or variety of spices available.  Spices can add flavor to dishes and help cut back on the amount of salt and fats (i.e. butter) used.  Recipe Inspirations puts a unique twist on traditional recipes and can help break the lull of eating the same thing over and over again.

There are many instances where I have and will pay for convenience.  Cooking is right up there at the top of the list.  To have a recipe and the correct type and amount of spices on one card is brilliant.  At present, McCormick offers six varieties of Recipe Inspirations.  All of them call for fresh, wholesome ingredients like meat and vegetables.  Prep time averages to be around 15 minutes with cook time under 30 minutes.  So in less than an hour, you’ll have a meal you may not have served before.

Some of the recipes include Garlic Lime Chicken Fajitas, Rosemary Roasted Chicken with Potatoes, and Quesadilla Casserole (my new favorite dish!).  Check out our take on Quesadilla Casserole (we omitted the cheese, used ground turkey breast in place of ground beef, and added avocado):

    It’s hard to think of a favorite dinner experience that was specifically on a Wednesday! But Wednesday is often my grocery shopping day, and sometimes I pick out something fun for dinner that night- my store has a great “Mediterranean” bar and I like to get an assortment of olives, stuffed grape leaves, hummus, baba ganoush and salads, plus some fresh pita bread, and just have a big spread of appetizers for dinner.

    Wednesdays are actually really tough, because that is the night when my teenager has cheerleading practice, and my husband teaches football. When we all get home, we have something quick and easy on Wednesdays. Something like spaghetti, with french bread and salad.

    I have a dinner group with three of my friends. We cook on Mondays for everyone in the group, then meet and swap meals for the week. So, my favorite Wednesday night dinner experience is that my meal is ready to go–all I have to do is throw it in the oven.

    Last Wednesday we barbequed chicken and the coals were too hot when we put the chicken on, so the flames came up and ENGULFED the chicken leaving it charred on the outside while still pink inside! We kept them on though…moving them around alot, and they actually surprisingly came out pretty delicious!

    I’m usually swamped with work by the time Wednesday rolls around and my hubby pretends he can’t cook. Mind you, he’s a good cook…but doesn’t like to. So when I’m busy, we tend to do something easy like cold boiled shrimp and boxed rice with a steam-bag veggie.

    When my husband and I were dating we would set aside Wednesday as Date Night. We would see each other on other days but Wednesday was always the day we made the extra effort to go out and do something nice after we had been at or respective jobs.

    I’m the eldest of six kids and started cooking just out of kindergarten. In fourth grade I decided that we needed to make Wednesday nights special since we were half way through the school week. Everyone loved meatloaf and baked potatoes (my uncle is a spud farmer and supplied us with fabuouls spuds), and so I decided that Wednesday would be meatloaf and baked potato night. Many times we laughed and told funny stories because my uncle had such a dry wit. Even though my uncle lived hundreds of miles away, we would recount stories about him or about funny things that happened while helping out on his farm in the summer months. We always ended up laughing our heads off. So, Wednesday night “meatloaf” meals have some fun remembrances about them.

    Wednesdays are usually my best day for cooking, since I don’t work on Wednesdays. I guess my best experience is that since I have more time, I usually make a good old fashioned meat and potatoes type of dinner, along with a desert on Wednesdays.

    On Wed. and everyday, we have been enjoying fresh veggies like corn on the cob lately, along with lots of delicious fruits. We also broke out the George Foreman Grill and tried out various meats on that. And then there’s the fresh bread from the breadmaker!

    Wednesdays are one of the fun nights. We usually have a theme night. Tacos for Mexican, pasta for Italian, American is Cheeseburgers, Fried rice for Chinese and sometimes its hodgepodge.

    It would have to be the cottage pie that comes out of the freezer having been previously made. Wednesdays are always tough nights when you reach that mid week point so should be followed with ice cream!

    I love when our family gets to eat together on Wednesdays! 3 Wednesdays a month during the school year our kids have religious education at church. It starts at a time that does not allow them to wait for me to get home so they end up eating with my husband and I eat separately when I get home.

    Now that my last two children are teenagers now Wednesdays we cook together. Last week we made chicken parmesan together and this past week we made homemade pizzas. It is so much fun cooking together instead of me just cooking which is boring. We crank up the radio laugh and talk about that day’s happenings. Cooking together has brought us much closer plus with them cooking with me I now don’t have to do the dishes LOL.

    Wednesdays are busy here so I like to put a sirloin roast in the crock pot with potatoes, carrots, celery and cabbage and sprinkle with McCormick Steak Seasoning and let cook on low for eight hours.
    Add biscuits and dinner is ready with no fuss.

    When I was growing up, Mom had a semi-set menu, so you could count on dinner being one of a few things on any given day. Wednesday was “what’s on special” day – Mom would buy the meat special at the grocery store that week and that’s what we had on Wednesday.

    I’m much less structured than Mom so I don’t have a specific Wednesday experience in my household.

    Right now our Wednesday’s are busy, because my son has baseball practice followed immediately by Boy Scouts. So I usually make soup on wednesdays, that way my son and I can eat it before practice, and then my husband and daugthers eat it when my husband gets home from work.

    Wednesdays are a quick meal because I go to see my grandbabies, so I throw a pizza in the oven and make a salad, or else make turkey burgers and a salad. I just don’t have too much time to do more that day.

    Our favorite quick Wed meal is fajitas. Just stir up some chicken and veggies and toss them in a tortilla with some toppings. I’d love to try their seasonings. I’m a “quick” cook too! Thanks.

    For us, Wednesday is a busy day so one of our favorite Wednesday meals is breakfast. Scrambled eggs, biscuits or grits – bacon or sausage – quick, easy, tasty and filling – it’s a great dinner

    We don’t have a consistent meal plan on Wednesdays. My favorite meals are those that are quick & don’t require a lot of fussing on my part. A good example is BBQ country ribs with roasted red potatoes & corn. Thanks for the giveaway!
