Early mornings, wide-eyes, laughter, and the smell of cinnamon rolls baking in our oven are just a few Christmas memories I hold near to me. It’s hard to believe that we’re 6 weeks away from Christmas, but the holiday is sneaking up on me and since I love to get creative in the kitchen, I’ve already started planning our Christmas Brunch Menu.
Breakfast is our favorite meal, but one I don’t often find the time to get elaborate with during the week. The weekends are my time to experiment and some of my past menus have included everything from Stuffed French Toast to Spinach, Leek, and Gruyere Quiche. Inspired by Walmart’s Holiday Entertaining Showcase, I thought I’d take my own spin on the Bacon, Egg and Cheese Brunch Ring presented by Pillsbury.
Their recipe had a definite Mexican flair and while I do love the flavors of this culture, I wanted my rendition to evoke tradition while still remaining true to it’s original hearty ingredient profile. I used Turkey Bacon in place of Pork Bacon, sharp cheddar in place of Mexican Cheese and added freshly chopped chives. Here is the recipe for a Crescent Bacon, Egg, and Sharp Cheddar Brunch Ring:
- 1 8 ounce can of Pillsbury refrigerated crescent dinner rolls
- 4 slices of turkey bacon cut in half crosswise
- 4 eggs slightly beaten
- 1 cup shredded sharp cheddar cheese
- 1/3 cup plus 1 tablespoon milk I use 2%
- ¼ cup chopped red bell pepper
- 2 tablespoons fresh chives plus additional for garnish, chopped
- Salt and pepper to taste

Heat oven to 400°F

Line large baking sheet with parchment paper

Lay bacon strips flat, ensuring pieces do not overlap

Bake for approximately 10 minutes until cooked but not crisp

Set bacon aside

In medium bowl, beat 1/3 cup of the milk, eggs, salt and pepper until well mixed

Stir in bell pepper and chives

Pour egg mixture into a fluted cake pan prepared with cooking spray (I use Olive Oil)

Bake at 350°F for 10-15 minutes or until eggs are set but still moist

Unroll crescent dough and separate into 8 triangles

On another parchment-lined cookie sheet, arrange triangles with the shortest sides towards the center

Overlap to create a star shape, leaving a 4-inch round circle open in the center

Press overlapping dough to flatten

Place bacon on each of the triangles

Sprinkle 1/3 cup of the cheese onto the widest part of the dough

Place eggs over cheese

Sprinkle with and additional 1/3 cup of cheese

Pull points of triangles over eggs and cheese and tuck under dough to form ring

Brush dough with remaining 1 tablespoon milk

Sprinkle with remaining 1/3 cup cheese

Bake at 375°F for 20 or until the dough is a deep golden brown

Cool for 2 minutes

Using a broad spatula, carefully loosen ring from cookie sheet and slide onto a serving platter

Garnish with freshly chopped chives
As you might have noticed in the recipe instructions, I opted to bake the bacon and the eggs in the oven. If you are trying to find small ways to cut fat and calories during the holiday season, you can do so by avoiding the excess grease associated with frying bacon and eggs. While this recipe doesn’t contain a lot of ingredients, the preparation takes at least 30 minutes so be sure to allow time for this process when planning your holiday brunch.
One of the nice things about this recipe is that it lends itself well to variation. The next time I make it, I’m thinking of adding spinach to the eggs and substituting feta or gruyere for the cheddar.
Tips:
1. Remember not to overcook the bacon or you won’t be able to pull the dough over the egg mixture without the bacon crumbling
2. Leave the dough in the refrigerator until you are ready to use it. As it warms, it can become sticky and difficult to unroll and use.
My kids are HUGE fans of bacon and eggs so this was a great way to incorporate the foods they love in with fresh veggies in a dish that displays beautifully.
Serve this Crescent Bacon, Egg, and Sharp Cheddar Brunch Ring at home Christmas morning or bring it with you to your next holiday celebration.
