It was supposed to be a vacation. Two weeks to walk the streets of Florence, eat crepes in Paris, and climb to the top of Big Ben. I’d already visited Europe three other times, and yet, my list of must-dos quickly grew. I would need weeks to get it all done. And with Europe being an entire day’s worth of travel, I wanted to make the most out of our time overseas. So I did what any twenty-something year old would do when life’s commitments are minimal…I secured a work permit and a visa, put all of my stuff in storage, and moved to Edinburgh for nearly a year. In between taking care of the infants born in the city, I saw the world through planes, trains and automobiles. And I stayed at some of the most unique places in Europe including castles, lighthouses and churches.
