There was a time when I balked at the idea of getting culinary in the kitchen. It’s not that I don’t enjoy good food (my husband and I are both total foodies). I just didn’t trust my ability to create something exciting (or at the very least, edible).  When we didn’t have children, it was easy to simply go out, particularly if my husband was traveling or working late. But when my children were born, I was adamant about ensuring they ate everything from broccoli and asparagus to salmon and quinoa.  And for the most part, those foods aren’t being served at our local drive-thru.  So I had to don my virtual apron and get my hands dirty in the kitchen.  The result? I have a son who eats salad and veggies daily and a daughter who loves whole grain pasta and vegan cheese.

The reality is, as much as I want to cook a gourmet meal every single night, I simply don’t have time. The Best Meals Happen At Home is a website created in partnership with Publix that offers recipes that can be made in 30 minutes or less. You can sign up for their free emails to receive weekly coupons and recipes.

This halibut recipe looks amazing!  Be sure to use Wild Alaskan or refer to Seafood Watch for sustainable seafood options.
