Blender Truffle Cauliflower Macaroni and Cheese Recipe
Ingredients
  • 1/2 cup butter
  • 1/2 cup flour
  • 2 cups whole milk
  • 1 cup white cheddar cheese shredded
  • 1/2 cup Gruyere shredded
  • 1 cauliflower medium-sized
  • 1 ounce Truffle oil
  • 1/3 cup bread crumbs
  • salt and pepper to taste
  • 16 ounces dried macaroni elbow
Instructions
  1. Cook macaroni al dente, approximately 6-8 minutes

  2. Drain pasta and set aside

  3. Spray an 8-inch by 8-inch baking dish with cooking spray

  4. Add macaroni to dish

  5. Clean the cauliflower and cut into florets

  6. Toss with half of the truffle oil and a sprinkle of salt and pepper

  7. Roast in the oven for 5 minutes and turn over. Roast for an additional 5 minutes.

  8. Place butter, flour, salt, milk, and  into the Vitamix container in the order listed and secure lid

  9. Turn machine on and slowly increase speed from Variable 1 to Variable 10, blending for approximately 1 minute

  10. Remove the lid and add the cauliflower 

  11. Blend for 3-4 minutes or until heavy steam escapes through the lid opening

  12. Remove the lid plug and add cheeses through the lid opening

  13. Blend for 1 minute

  14. Pour over macaroni and mix thoroughly

  15. Cover macaroni with bread crumbs and extra cheddar and Gruyere cheeses

  16. Bake at 350°F for 30-40 minutes, or until topping has browned
