Travel has this way of broadening one’s perspective on life. It wasn’t until I was in the midst of an 8-week long backpacking adventure through Europe that I begin to expand my taste buds. In some ways this happened out of necessity. But there is also something inspiring and adventurous about eating a Tuna Nicoise Salad in Cannes or Tortilla Española in Spain.

Today’s recipe is inspired by my travels. Niçoise Salad originated in Nice and traditionally includes cooked or canned tuna, tomatoes, hard-boiled eggs, Niçoise Olives, and anchovies dressed with olive oil. The salad is light yet satiating and offers a combination of bold flavors. If you were to enjoy this salad in France, it would likely only consist of fresh vegetables. But around the world, it is common to find cooked green beans and potatoes included in a Niçoise Salad.
My take on one of the best salads ever, includes StarKist Tuna Creations BOLD Sriracha. We have enjoyed StarKist Tuna for years, and were just introduced to the brand’s new bold flavors (which include BOLD Tapatío, BOLD Jalapeño, BOLD Hot Buffalo Style, BOLD Thai Chili Style, and BOLD Rice & Beans).
Sriracha is a popular hot sauce made from chile peppers, garlic, and distilled vinegar so it gives this salad a spicy kick! The sauce itself is very versatile and the addition to StarKist Tuna makes it ideal for everything from eggs and noodles to edamame and salad.
Lunch is perhaps my biggest mealtime challenge. Very often I am working through the traditional lunch hour, so quick meals that I can put together easily are ideal. The main ingredients in my Niçoise Salad Recipe include tomatoes, red onions, french green beans, red potatoes, olives, hard-boiled eggs, and StarKist Tuna on a bed of greens. I also put together a Lemon Vinaigrette Dressing to accompany the salad.
If you are pressed for time and in need of a quick meal, cook the eggs and potatoes ahead of time and store until you are ready to put the salad together. Assemble all of the salad ingredients on a plate and add the tuna when you are ready to enjoy the dish. StarKist Tuna Creations BOLD pouches are single-serve and do not require a can opener or draining, so you can just pack a pouch along with your salad ingredients. As a pescetarian I find that these pouches are a great way to get in a serving of lean protein.
- 1/2 cup olive oil
- 3 T white wine vinegar
- Juice of 1 lemon
- 1 T dijon mustard
- Salt and pepper to taste
- 2 pouches of StarKist Tuna Creations BOLD Sriracha
- 4 red boiled until soft, quartered
- 4 hard-boiled eggs sliced
- 1 package of mixed greens 5 oz bag
- 1 cup assorted cherry tomatoes sliced
- 1/2 English cucumber sliced
- 1/2 cup French Green Beans cooked al dente
- 1/2 red onion thinly sliced
- 12 green or black olives halved, if desired
- 1-2 T capers for garnish

Combine ingredients in a small bowl with a whisk.

Cut potatoes into quarters and boil salted water until soft, approximately 15 minutes. Refrigerate.

Boil eggs in salted water for 8-10 minutes. Place on ice.

Place greens on a large plate.

Arrange remaining ingredients in a circle around the greens.

Garnish with capers and serve immediately with Lemon Vinaigrette
