‘Tis the Season To Be Baking: Musselman’s Apple Butter and Apple Cider

A few months ago, I finally sampled apple butter! This “highly concentrated form of applesauce” is seasoned with cinnamon and cloves and makes a wonderful spread.  Since I’ve been baking all week, I decided to make an Apple Butter Breakfast Cake (recipe via Musselman’s):

Awesome Apple Butter Breakfast Cake

Ingredients

  • Ingredients:
  • 2¼ cup all-purpose baking mix
  • ¾ cup milk
  • ½ cup sugar
  • 1 large egg
  • 2 Tbsp. butter, melted
  • 2 cups MUSSELMAN’S® APPLE BUTTER
  • TOPPING:
  • 1/3 cup sweetened flaked coconut
  • 1/3 cup pecans, chopped
  • 1/3 cup sugar
  • 2 Tbsp. butter, melted

Directions

In bowl, stir together baking mix, milk, sugar, egg and 2 Tbsp. melted butter. Pour 2/3 of the batter into an 8×8-inch baking dish coated with non-stick cooking spray. Cover with apple butter. Drop remaining batter by spoonfuls on cake. Combine last four ingredients and sprinkle on top. Bake at 350° for 1 hour until cake tester inserted in center of cake comes out clean.

The recipe was quick and easy to prepare and came out moist and full of flavor.  I’m not a fan of flaked coconut so I omitted the topping completely and still found it to be delicious.

Since this is really my first experience with apple butter, I was quite impressed with it’s flavor and versatility.  Musselman’s has over 25 recipes that use apple butter (including several savory recipes) including an Apple Butter Cheesecake that sounds absolutely decadent!  You can also blend it with cream cheese and serve it with graham crackers as an appetizer.

During my visit to Pennsylvania, I had an opportunity to sample a variety of their products, one of which is their popular Fresh Pressed Cider. So what’s the difference between apple cider and apple juice?  Apple cider is an unfiltered, unsweetened drink made from apples, while apple juice is the filtered version of apple cider.

During the cold, winter months, I enjoy adding spices to hot apple cider.  Here is a quick and easy recipe that will warm you up and give your house a fresh, holiday aroma:

Musselman’s Hot Mulled Cider

Ingredients

  • One gallon Musselman’s Fresh Pressed Cider
  • 3 Cinnamon sticks
  • 1 Tbsp whole cloves
  • 1 Tsp whole allspice
  • 1/2 Orange, sliced, rind and all (optional)

Directions

Pour one gallon of Musselman’s apple cider into a large pot on the stove or into a crockpot/slow cooker). Place the cinnamon sticks into the cider. Wrap the whole cloves and whole allspice in a square of cheesecloth and tie closed. Add to the pot. Add orange slices if desired. Heat the cider until it just starts to boil, lower the setting to simmer for another 15 minutes to allow for infusion of the spices. Stir occasionally.

Leave the pot uncovered so that you and your family can enjoy the warm, delicious aroma.

Remove the spices and oranges from the pot and ladle hot mulled cider into mugs.

Tips: If you don’t have cheesecloth on hand, use a tea ball or a coffee filter to hold the spices.

If you are leaving the crockpot out for your guests at a party, you can stud an apple with cloves and allow that to float in your cider. Or leave the cinnamon sticks and oranges in the cider for decoration.
