St. Patrick’s Day-Inspired Recipe: No Bake Vegan Key Lime Pie

Earlier this week, I was on the phone with a friend. We were talking about my Vegan Cornbread recipe and how she hopes one day I’ll write a mini cookbook or even an ebook.  Considering the fact that I’ve just spent the last week trying (unsuccessfully might I add) to perfect a Vegan Peppermint Brownie recipe, I’m thinking I should stick to something I know…like nursing.

As you’re well aware, my son suffers from food allergies.  I NEVER imagined I’d be eating anything vegan (how in the WORLD would I give up cheese? or ice cream?)  let alone MAKING vegan dishes. But, as I get older, I’m moving away from animal products, particularly meat.  I wouldn’t say at this point that I’m a vegetarian, but it’s what I’m aspiring to be.  But back to vegan baking. It’s difficult. Incredibly difficult. Foods you never imagined contained animal products, do.  Simply substituting one ingredient for another doesn’t always work (did I mention my brownie disaster)?

In the spirit of St. Patrick’s Day, I have been wanting to bake something green…or minty…or both.  Since it was to be consumed by my son, at the very least it had to be allergen friendly.  I finally decided to attempt a vegan key lime pie.  Oh my YUM! Success!  Bonus?  You don’t have to bake it!

No Bake Vegan Key Lime Pie

The juice from 2 limes (organic if you wish)

The rind from 2 limes

1/4 cup Ener-G egg replacer

1 tablespoon cornstarch

1 cup raw organic sugar

1 1/2 cups almond milk

1 9 inch baked pie shell (I like this one from Wholly Wholesome)

For this recipe, you’ll want to combine all ingredients using  a double boiler.  This is the type of recipe that will scorch quickly so I highly recommend cooking it this way. Once the mixture resembles a pudding, remove it from the heat and place it in the pie shell. Refrigerate for 3-4 hours.
