Skillet Strawberry Cobbler

A few weeks ago, we celebrated the close of another year of cub scouting with a family barbecue.  Along with the traditional hamburgers, hot dogs, and side dishes, one dessert in particular caught my eye. A beautiful, aromatic peach cobbler was displayed amongst cookies and cakes. What was so striking about this cobbler was that it was prepared in a cast iron skillet and looked absolutely exquisite, as if someone had spent quite a bit of time preparing this dish. When I finally tracked down the “chef,” she told me that she used a simple boy scout recipe with just 4 ingredients!

Fresh Strawberries

I put that recipe in my repertoire of “really good foods I want to make,” and re-created it with fresh strawberries over the weekend. Cobbler is widely popular, particularly in the summer when a wide variety of fruits are in season. It’s simplicity is a draw and can be made with any combination of fruits. In its simplest form, a cobbler is simply a fruit filling poured into a baking dish and covered with a batter before baking. The number of variations is endless and this dish can become as complex as your imagination affords. In the boy scout version, canned fruit is topped with cake mix, butter, and cinnamon and cooked for 30-40 minutes.

 Strawberry Cobbler Ingredients

I always prefer to use fresh fruit varieties and bake from scratch, so this Skillet Strawberry Cobbler features fresh strawberries from Walmart and a mildly sweet buttermilk biscuit topping that complements the fruit beautifully. While you could easily prepare this dessert in a glass or ceramic baking dish, I prefer the cast iron skillet, which allows for more uniform cooking.

Here is my easy recipe for a Summer Skillet Strawberry Cobbler!

Ingredients
For the Filling
  • 16 ounces of fresh strawberries rinsed, hulled, and sliced
  • 1 Tbs organic sugar may need more, depending on how sweet the berries are
  • 1 Tbs unbleached all-purpose flour
  • 1 Tbs fresh lemon juice
  • 1/2 tsp vanilla extract
For the Topping
  • 1 cup unbleached all-purpose flour
  • 1/4 tsp baking soda
  • 1 1/2 tsp baking powder
  • 2 Tbs organic sugar
  • Pinch of salt
  • 4 Tbs unsalted butter
  • 1 egg
  • 1/2 cup buttermilk
  • 1/2 tsp vanilla extract
For the Fresh Whipped Cream
  • 1 cup of heavy whipping cream
  • 1 T powdered sugar
Instructions
For the Filling
  1. Combine strawberries with lemon juice, 1/2 teaspoon vanilla extract, 1 tablespoon sugar, and 1 tablespoon flour and set aside
For the Topping
  1. Combine flour, baking soda, baking powder, sugar and salt into a small bowl
  2. Cut in butter and combine until a crumbly mixtures forms
  3. Whisk egg, buttermilk and vanilla extract together in a small bowl
  4. Add egg/buttermilk mixture to dry ingredients and stir to combine
For the Cobbler
  1. Preheat oven to 375°F
  2. Spoon strawberries into bottom of cast iron skillet
  3. Top strawberries with spoonfuls of dough
  4. Bake for 30-35 minutes, or until topping has browned
  5. Allow to cool before serving, as cast iron skillet with be very hot
For the Fresh Whipped Cream
  1. Using a stand mixer, whip cream and powdered sugar together until thick and soft peaks have formed
  2. Serve Skillet Strawberry Cobbler with Fresh Whipped Cream

    First time reader, first thing I saw on the front page, looks amazing! I don’t think I’ve had a strawberry cobbler but I’m pretty sure it’s just as good, if not better than the other cobblers I’ve had! 🙂
