Between soccer practice, Cub Scouts meetings, and homework, homemade meals are a challenge during the school year. This is the season where I rely heavily on crockpot meals, my cast iron skillet, make-ahead recipes, and meal planning to ensure my kids enjoy healthy home-cooked dishes.
One of my kids’ favorite cuisines is Mexican, and every week we designate one night for tacos, burritos or other culturally-inspired dishes. Traditionally, Mexican dishes integrate mainstay foods such as avocados, tomatoes, chili peppers, corn, rice, and beans (specifically refried beans). These ingredients are then fused together using Mesoamerican and European cooking styles to create everything from simple taco dishes to elaborate moles.
Refried beans are a prominent dish in Mexican culture, and served as a side dish or used as a main ingredient in tostadas, chimichangas and more. This dish of cooked, mashed beans can be eaten at any meal, and typically takes 1-2 hours to prepare. Herdez recently introduced their brand new Instant Refried Beans which can be prepared in just 5 minutes, making it even easier for families to eat Frijoles con Todo. Available in 4 varieties, Herdez Instant Refried Beans offer families the home-cooked flavor and texture they would expect from traditional and restaurant varieties.
The very first time I cooked Herdez Instant Refried Beans, I was admittedly surprised at how quickly and perfectly they cooed. Once you’ve boiled the required amount of water, you simply add the packet of dried beans to the water and simmer for 5 minutes. Remove the beans from the heat so they don’t overcook or dry out and allow them to sit for an additional 5 minutes before serving.
I utilized Herdez Traditional Instant Refried Beans in my latest Skillet Mexican Casserole Dish. I like to use a cast iron skillet to hasten the cooking process and ensure that my dish is cooked evenly throughout. I’ve made everything from s’mores and peach cobbler to lasagna and my latest Mexican Casserole Dish. This particular version is meatless, but you could easily incorporate chicken, ground turkey or beef if you desire a hearty, meat-based dish.
- 1 cup canned corn
- 1 cup Herdez Traditional Salsa
- 1 package of Herdez Traditional Instant Refried Beans prepared
- 1/2 cup sharp cheddar cheese
- 1 6- ounce package of cornbread mix
One of the reasons I love this Skillet Mexican Casserole is its ease of preparation. Once you’ve prepared the Herdez Instant Refried Beans, simply put the casserole together and bake. The result is a hearty, decadent dish featuring some of my favorite foods that also define Mexican cuisine.
The beauty of this dish is that it can be customized to your personal palate. You could easily add meat into this dish (I would layer it at the bottom of the skillet) or vary the variety of Herdez Instant Refried Beans (Jalapeno, Queso or Choriz0) and cheese. Be sure to use a savory corn bread mix for this recipe.
