We had the best summer ever! We got our thrills on at our local amusement parks, learned about a wide variety of animals at our local museums and zoo, enjoyed the summer warm sun and cool water at our local pool, and even managed to sneak in a staycation. But alas, Labor Day Weekend encroached upon us quickly, the unofficial end to our summer of fun. Since my son will start his first official school year in a few days, we decided to stay close to home, opting to celebrate the end of summer with family.
Grilling is a quick, easy, healthy way to cook up a meal, particularly when serving a large number of people. We don’t eat a lot of meat in our home, and when we do, we prefer to grill it. Grilling is a cooking method that cooks the meat quickly, while allowing the fat to drip off. A quicker cook time means that more nutrients are preserved so overall, it’s healthier, as long as you clean the grill regularly and you don’t char the meat (for healthy grilling tips, visit the American Cancer Society).
With $100 to spend, we managed to get everything we needed for our Labor Day “grill” out at Walmart! The total price was just $56.07 plus tax!
The very first recipe we created was a simple marinade to grill the chicken.
- 2 Avocados pitted and chopped
- 1 Tomato chopped
- 1/4 Onion chopped
- 2 T Cilantro chopped
- Juice of 1/2 lime
- Juice of 1/4 orange

Place avocados, tomato, onions, and cilantro in a bowl.

Squeeze lime and orange juices over the mixture and combine

Top with fresh cilantro
While the chicken was marinading, we began the macaroni and cheese.
- 2 Avocados pitted and chopped
- 1 Tomato chopped
- 1/4 Onion chopped
- 2 T Cilantro chopped
- Juice of 1/2 lime
- Juice of 1/4 orange

Top with fresh cilantro
We then grilled the chicken along with the fresh corn.
The very last dish we made was the fresh guacamole.

We completed the meal with fresh, chopped watermelon and green grapes and served iced tea and Martinelli’s Sparkling Mango Lemonade.
The entire meal took about 1 1/2 hours to prepare and cook and we enjoyed a healthy, festive, labor day grill-out right in our back yard.
