My first childhood baking ventures began like most…refrigerated cookie dough or boxed muffin mixes with just a few simple ingredients. Even as I got older, I only dabbled in “real” baking from scratch, religiously adhering to the directions spelled out in my parents’ cookbooks. When my 2 year old son was diagnosed with food allergies, I was forced to rethink every single thing he consumed. If you read my blog during the early days, you would often “hear” me complain about my lack of culinary skills and how much I disliked cooking. But baking has always been different. Baking is what I do to relax…how I express my creativity…I look for any excuse to bake and when my son was diagnosed with food allergies, I wasn’t disheartened…I was inspired and determined to recreate the treats he loved without the allergens.
Just today, I was talking to a friend about creating recipes and how difficult the process can be. I’ve baked and re-baked foods numerous times to achieve a dish that delights the palate. Surprisingly, it only took one attempt to get these cookies to come out just right.
Walt Disney’s theatrical musical Mary Poppins is slated to debut at the Ahmanson Theatre this August, and having seen it twice (once in New York at The New Amsterdam Theatre and once at the Segerstrom Center for the Arts), I find it to be one of my all-time favorites.
Inspired by the infamous song, A Spoonful of Sugar, I decided to create a vegan, no-sugar cookie recipe.
- 1/2 + 1/8 cups flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup unsweetened cocoa powder
- 1/4 cup soy-free vegan butter, softened
- 1/4 + 1/8 cup peanut butter smooth, creamy
- 1/4 + 1/8 cup pure maple syrup I prefer the dark
- 1 1/2 teaspoons Ener-G egg replacer mixed with 2 tablespoons warm water
- 1 teaspoon pure vanilla extract
- 1/4 to 1/2 bar of vegan organic dark chocolate, chopped

Preheat oven to 350 degrees F

Combine dry ingredients in a medium-sized bowl and set aside

Cream butter, peanut butter, and maple syrup.

Fold in egg replacement mixture and vanilla extract

Add in dry ingredients (don't over-mix)

Stir in dark chocolate chunks

Space cookies out about 2 inches apart on an un-greased cookie sheet

Bake for 12 minutes at 350 degrees F.

Remove from baking sheet and allow to cool completely
I was incredibly surprised at how delicious these cookies turned out, considering the fact that they’re vegan and free from refined sugar. What is your sweet or savory favorite recipe? Think about it, because at the end of this post you’ll need it!

These cookies look awesome! Will definitely have to give them a try. My standard go-to cookie recipe is these healthy oatmeal chocolate chip cookie recipes. Oh…my…goodness… that recipe looks so good! I love that it is vegan and sugar free! My favorite sweet recipe is my mom’s homemade brownies, she makes them from scratch using my great grandmother’s recipe. I can’t make them near as good as my mom does.
