Recipe: Grilled Artichoke + Garlic Aioli

Name: Garlic Aioli
Ingredients: 1/2 cup Hellmann's Mayonnaise; 2 cloves of garlic (minced); Juice of 1/2 lemon; Dash of salt and white pepper

If you’ve been following my grilling adventures, then you know that cooking in this way was quite intimidating. Having picked up a few tips last month, I ventured outside over the weekend to grill a few relatively simple dishes. Vegetables are probably one of the easiest foods to grill because apart from burning them, they can’t really be messed up. While my fish was cooking on the grill, I brushed a bit of herb marinade over the vegetables and placed them on the grill. The combination of the marinade and the natural aroma of the grill made for soft, flavorful vegetables with all of their moisture retained.

My children are actually pretty good about eating vegetables and trying new foods, but it helps if they can dip them in a sauce. I absolutely love aioli, a sauce with origins in the South of France (Provence). This simple compliment to fish and vegetables traditionally includes garlic, olive oil, lemon juice, and egg yolks. Interestingly enough, many of the ingredients resemble those found in Hellmann’s Mayonnaise, so I thought I’d use it to create my own Garlic Aioli!

Garlic Aioli

Ingredients

1/2 cup Hellmann's Mayonnaise
2 cloves of garlic minced
Juice of 1/2 lemon
Dash of salt and white pepper

Instructions

Combine all ingredients in a small bowl
Refrigerate for at least 30 minutes to allow flavors to meld

This homemade Garlic Aioli was the perfect compliment to our grilled artichoke and was super easy to prepare.
