Despite the fact that I’m a complete and utter chocoholic, I’m finding that I’m incredibly drawn to fruit-inspired baked goods. My husband and I tag teamed it this weekend, and together, we created several easy, Labor-Day inspired dishes to celebrate the last few days of summer. Since my children absolutely love berries, I dived into creating a berry tart. While this dish is definitely not vegan, I’ll tell you how I altered the recipe so my son could enjoy his very own berry tart.
- Assortment of washed berries including strawberries, blueberries, and raspberries
- Pastry Crust
- Custard
-
Fill crust with custard
-
Layer berries on top of custard
-
Chill and serve
Once you’ve prepared your crust, you can begin making the custard that will fill the crust.

This is a relatively simple, delicious dessert that works well for a summer or fall dish. The custard is sweet without overwhelming and compliments the berries nicely. You could brush a fruit glaze on the bottom of the crust and over the berries, but I prefer the simple version with the fruit and the custard.
Since this is a dish my son is not able to eat, I picked up some mini Wholly Wholesome crusts at our local Whole Foods. I then made a vegan custard with cornstarch, almond milk, and sugar. The full recipe forthcoming!

This looks amazing! I made a berry crumble last night with some too-long-in-the-fridge raspberries and blackberries and it was delicious. I’ll have to give this a try.

Mmmmm…. This recipe seems like a good one for Easter as well. 🙂 My son would just pick out all the strawberries and leave the rest for us to eat. 🙂

I love simple tarts like this. I hate those that have glaze all over it and hide the burst of berry flavors.
