At just 50 calories for a 1 cup serving, strawberries have quite the impressive nutrition profile. Inside this sweet, juicy, delightful fruit are antioxidants, fiber, folate, potassium, and Vitamin C, information I learned during my visit to Monterey with the California Strawberry Commission. As someone who loves all-things-strawberry, I didn’t need a lot of convincing. Rather, I came away from the trip equipped with information and facts to support my frequent consumption of this fruit.
Inspired by all of the sweet and savory strawberry-inspired recipes we enjoyed during the trip, I created a Dark Chocolate Ganache-Filled Strawberry:
- 10-12 Large Strawberries
- 1/3 cup Heavy Whipping Cream
- 1 3.5 ounce bar of Dark Chocolate I used Ghirardelli's Intense Dark 60% Cacao Evening Dream Bar
- Fresh Whipped Cream Heavy Whipping Cream whipped with Powdered Sugar
- Fresh Mint Leaves

Boil heavy whipping cream (avoid scorching)

Pour over dark chocolate pieces

Whisk until smooth

Cool

Hull strawberries
-
Fill with Ganache

Top with fresh whipped cream and mint leaves
