Recipe: Albacore Tuna Melt

Over the holiday weekend, I spent some time baking and cooking up my favorite foods.  I love long weekends because I actually have the time to experiment and create new recipes without the pressure of our weekly routine.  With summer approaching, I’m looking for quick, easy meals that are healthy and flavorful.  I try not to use our oven in the summer because our central air uses up quite a bit of energy on those days when the heat is unrelenting, so salads and sandwiches are staples for this time of year.

One of my favorite lunchtime meals is the traditional tuna melt.  In my recipe, I substitute sour cream which makes for a creamier, richer tuna salad.  Here is what you’ll need:

Servings: 2
Ingredients
  • 1 can Solid White Albacore in Water I use Bumble Bee Foods' tuna
  • 1/8 to 1/4 cup of Sour Cream
  • 1/4 chopped Red Onion
  • Salt and Pepper to taste
  • Shredded Cheddar Cheese
  • Lettuce
  • Sliced Tomatoes
  • Sourdough Cracked Wheat Bread sliced
Instructions
  1. Combine albacore with sour cream, onions, salt, and pepper.
  2. Sprinkle cheddar cheese
  3. Warm in toaster oven until bread is toasted and cheese is melted
  4. Top with lettuce and tomatoes (you could also add pickles and shredded carrots)

    YUM! I absolutely love Tuna Melts but haven’t thought to try sour cream! I’ll do that next time!

    I love tuna melt on wheat…. but sourdough is my bread of choice for the most part. 🙂 Pretty pictures!
