Quinoa, Black Bean, and Corn Stuffed Avocados

If given the option, my kids would snack all day long, to the extent of foregoing meals. To give my kids credit, they eat a wide variety of fruits and vegetables, some of which other parents struggle to entice their kids to eat. But being that they are still just kids, if I don’t have healthy options on-hand, it’s almost certain that I’ll find them elbow-deep in cookies, crackers and other empty calorie snacks.

Stuffed Avocados

One of my favorite things to do with fruits and vegetables is to pair them with a traditional snack food like chips, crackers, or pretzels. In fact, I had every intention of serving my Quinoa, Black Bean, and Corn Stuffed Avocados with Wild Oats’ Tortilla Chips, but before I brought the bag out my kids had already eaten those avocados in their entirety.

Stuffed Avocado Ingredients

This recipe for stuffed avocados is easy to put together and requires minimal cooking skills. If you adhere to a vegetarian diet, you’ll absolutely love this recipe since it includes nutrient-rich avocados, quinoa, and organic black beans, all of which are high in fiber and protein. Most of the ingredients I used were organic, save the red bell pepper, cherry tomatoes, and lime, which were locally grown. The organic produce section at my local Walmart continues to grow and while I still can’t find organic varieties for every fruit and vegetable we consume, I’ve noticed an increase in my purchase of organics overall due to Walmart’s affordable prices.

Here is my recipe for Quinoa, Black Bean and Corn Stuffed Avocados:

Quinoa, Black Bean, and Corn Stuffed Avocados
Ingredients
  • 2 Organic Avocados
  • 1/2 cup Wild Oats Marketplace Organic Whole Kernel Corn
  • 1/2 cup Wild Oats Marketplace Organic Black Beans
  • 1/2 red bell pepper chopped
  • 1/4 red onion chopped
  • 10 cherry tomatoes quartered
  • 1/2 cup cooked Wild Oats Marketplace Organic Traditional Quinoa
  • Juice of 1/2 lime
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish if desired
Instructions
  1. Drain corn
  2. Rinse and drain black beans
  3. Combine corn, black beans, red bell pepper, red onion, cherry tomatoes and quinoa in a large bowl
  4. Cut avocados in half and remove pits
  5. Remove one layer of avocado and chop
  6. Gently fold in chopped avocado
  7. Add lime juice and olive oil to mixture
  8. Place a generous scoop of mixture onto each avocado half
  9. Top with fresh cilantro, if desired
  10. Serve immediately

Black Bean, Corn and Quinoa Salad

While this recipe can be made by anyone, regardless of skill, I thought I’d share a few tips to ensure success.

  1. Cook the quinoa ahead of time and refrigerate it while you are preparing the remaining ingredients. Also remember that quinoa cooks very quickly and if you don’t watch it, will burn. I like to use the 1:2 ratio when preparing quinoa.  For every 1 cup of quinoa, you’ll need 2 cups of liquid (broth, water, etc.)
  2. Wait until all of your ingredients are chopped and prepared before slicing avocados as they tend to brown quickly when exposed to the oxygen in the air. Squeeze in the lime juice immediately after you mix in the avocados to slow down the browning process.
  3. Avoid removing the entire flesh of the avocado fruit or the skin won’t likely support the weight of the salad. My kids actually enjoyed using a spoon to scoop out the remaining avocado after they had eaten the salad.

This was easy snack recipe, which took less than 30 minutes to prepare was a huge hit with my kids and one they’ll likely be eating for years to come.
