With the approaching 4th of July weekend, I’m dreaming up desserts to serve for the occasion. Berries are the summer fruits of choice in our family which means we consume them in abundance throughout the season. One of my favorite ways to pair berries is with citrus, specifically lemon.
You might remember my Lemon Blueberry Cheesecake Bars or my Strawberry Lemonade Cupcakes, both of which fused the sweetness of the berry with the tartness of lemons into desserts that were absolutely mouthwatering. But both of those desserts understandably took time and effort, and I’m aiming to enjoy as much as the 4th of July weekend as possible. So today I’m sharing this easy 5-ingredient, no-bake Lemon Mascarpone Bites thanks to Athens Foods.
One of my all-time favorite products for desserts is filo dough. I love the buttery flakiness it affords desserts without adding a significant amount of fat or calories. When I’m looking to make a quick dessert that still looks sophisticated, I use Athens’ Mini Filo Shells. Available in the freezer department of your local grocery store, these shells are fully baked and simply require a short thaw time before filling and serving. You can also pop them in the oven for 3-5 minutes to add an extra crispiness to your dessert.
For my Lemon Mascarpone Bites, I combined the juice of fresh lemons, organic cane sugar, organic whipping cream and fresh mascarpone cheese. Once this creamy mixture is whipped up, simply fill your Mini Filo Shells and top with your favorite summer berry for a quick, effortless dessert that looks amazing and tastes absolutely divine.
- 1/4 cup organic whipping cream
- 8 ounces mascarpone cheese
- 3 T organic cane sugar
- Juice and rind of 1 lemon
- 30 Athens Mini Fillo Shells
- Fresh berries of choice if desired

Using a stand mixer, beat whipping cream until soft peaks form (do not over-mix or whipping cream will separate)

In a separate bowl, combine mascarpone cheese, sugar, lemon juice, and lemon rind until creamy

Fold whipping cream into mascarpone cheese mixture

Pipe filling into mini fillo shells

Top each shell with additional fresh lemon rind and a single fresh berry, if desired

Serve immediately (may refrigerate to set filling, if desired)
This Lemon Mascarpone mixture is the perfect blend of sweet and tart flavors and reminds me of a Lemon Tiramisu (minus the eggs). It can be used as a filling in cakes or served with ladyfingers, fresh berries in a parfait, or any other way you can dream up. I personally love that it can be prepared in less than 30 minutes without ever turning the oven on.
