We are so inspired by the superb talent of this years’ Olympic Champions! We’ve been cheering Team Kellogg’s from our living room, riveted by their beauty, excellence, and grace (did you see Meryl Davis and Charlie White?). There are still many competitions to be watched, so to celebrate the Winter Olympics and teach my children why the “games” are important to us, I decided to create Rice Krispies Gold Medals.
Rice Krispies is my children’s favorite cereal and a breakfast staple in our home. I also love using this simple cereal to make Rice Krispies Treats because they’re easy enough to make without requiring a lot of time. We typically always have a bag of marshmallows in the cupboard (for impromptu hot chocolate), so I melted some butter along with a few cups of marshmallows, stirred in the Rice Krispies, then decided that everything tastes better with chocolate! You can find the recipe online, but here it is for quick reference:
- 3 tablespoons butter
- 4 cups miniature marshmallows
- 6 cups Kellogg's Rice Krispies

In a large pot, melt butter over low heat

Add marshmallows and stir until completely melted. Remove from heat

Add Rice Krispies cereal and stir until well coated

Using a buttered spatula or wax paper, press mixture evenly into a 13x9x2 inch pan coated with cooking spray

Cool and cut into 2-inch squares
Once you’ve made your Rice Krispies Treats, you can begin assembling your Rice Krispies Gold Medals. Here is what you’ll need:

Round Cookie Cutters
Chocolate Gold Coins (I opted for the larger coins which were available at my local candy store, Powell’s Sweet Shoppe)
Decorating Icing (I used
Red, White, and Blue Ribbon
One of the things I learned while making our Rice Krispie Holiday House last year was that I could use a rolling pin after my Rice Krispies Treats were in my pan to create a smooth surface. Allow your treats to cool, then follow these simple steps to creating your very own Rice Krispies Gold Medals.
1. Using a round cookie cutter, cut out “Gold Medals.” Walmart had a pack of 6 round cookie cutters in varying sizes and I experimented with 3 of them. If you want the Chocolate Gold Coins to match up with the Rice Krispies Treats, I recommend using the 3rd size in the set. Use the next size up for a slightly larger “Gold Medal.”
2. Poke a hole through the top of each “Gold Medal.” I used a large toothpick!
3. Thread a piece of ribbon through the hole and tie a knot. I recommend cutting the ribbon so that it is long enough to go over your child’s head.
4. Remove one side of the Chocolate Gold Coin and attach it (chocolate side down) to the Rice Krispies Treat with a small amount of Decorating Icing.
My kids had so much fun making these with me. The challenge was getting them to be patient enough to complete them since they were snacking on Rice Krispies Treats and Chocolate Gold Coins the entire time we were making these.
While we were making these Rice Krispies Gold Medals, I shared memories of watching the Summer and Winter Olympics with my parents. I also explained to them what a “gold medal” is and its significance.
